Description: An icon of Austin dining, the Night Hawk restaurant chain was founded in 1932 by former actor, Harry Akin. In the 1940s, Akin began raising his own cattle to cope with WWII shortages and successfully sold his frozen "chop't" steaks during the postwar era.This footage shows butchers carefully processing and preparing various cuts of meat.
