[Music] every working day in a commercial kitchen is a day spent with machines they save time and energy by grinding mixing chopping and slicing tons of food for years we couldn't begin to get along so we have to learn to get along with them they're all feeding food into one of these babies is like feeding so you've got to learn to live with them make one mistake and you've had it but clean up right and they're just so many pussycat [Music] equipment safety begins with the operator if he is new on the job he must be instructed and approved on each individual machine never operate a piece of equipment unless you are trained and authorized for him always follow the instructions of your supervisor and to refresh your memory read the posted rules once in a while safety includes what you wear as well as what you know stay away from loose garments such as towels or ornaments around the neck keep coats button and cuffs tight watches and rings can snag take your hand or arm with them leave them at home or in your locker most important is the operators attitude you must think safety and make it a habit keep your mind on what you're doing allowing your mind wander is like well like back on one of these there are several general rules about getting along with machines let's start at the beginning with the safety guards most modern equipment is safety engineered these protective plates are like the bars around our friends at the zoo they remind you to keep your distance but they're no help at all unless you use them and make sure they're in place before turning on the machine [Music] [Music] switches should be left off while plugging in power cords make it a habit to check every time always make sure your hands are dry and you are standing on a dry floor now you're ready to feed the beast a little meat safety guards in place and machine on now the plunger never use your hands for this you wouldn't stick your arm in the lion's mouth so good now suppose the machine suddenly jams what do you do the Beast has stopped eating do you reach your hand through the bars and coax of the little not on your life shut it off then use the proper tool to pry it free if you find a piece of equipment that isn't working as it should report it never try to adjust it or modify it in any way without the permission of your supervisor machines must be cleaned regularly for safety and sanitation the very first thing you do is make sure it's disconnected not just switched off disconnected switches can catch on your clothes or someone passing by while your hand is in there to clean a slicing machine after unplugging it move the adjuster to zero and force the blade against the plate a towel held at the back of the blade helps you rotate it safely wipe the blade from the inside to the outside edge so your hand moves back across the blade edge rather than into it when you finish cleaning leave the blade closed and the adjuster on zero to protect the fingers of the next guy the mixing machine can give you some real problems clamp the mixing bowl firmly into position and check it always make sure the whip or other attachments are locked into place when this baby is turned on it kicks up quite a fuss if everything isn't just right otherwise you may find parts and going in all directions during the rush ow when the pressure is on it's too late to learn the fine points of handling machines then you have to move and fast learn the habit of machine safety now if you have questions or doubts about any piece of equipment you have to operate talk it over with your supervisor machine injuries may not occur very often but when they do they're always painful and usually very serious so when you're tempted to get careless remember our friends at the zoo and think again [Music]
