Emerson Yorke Studio presents "Fish is Food", a short 1946 film about the fishing industry. foreign [Music] midnight and a city sleeps but while the city sleeps men are busy preparing and transporting food for the millions of persons in the city who depend upon the work of others on the soil and the Sea for their daily food the dawn comes up on a new day and with a coming of dawn one of the world's largest fish markets swings into action ready to carry out its Mammoth job of supplying the great City with its daily requirements of fish [Music] here in the shadow of the financial and business district hundreds of people are employed to handle the many varieties of fish consumed each day before the day is half over these Fish Fresh from the ocean rivers and lakes will be dressed packed in ice and delivered to stores hotels and restaurants it is difficult to tell the buyers from the sellers as everyone is in working clothes this is one of the 100 wholesale firms that together deal in more than 175 000 tons of fish and shellfish each year [Music] inspectors from the board of health check constantly on the quality size and freshness of the fish protecting the health of the city some fish are brought to the market still alive transported in tank cars and trucks most shellfish too are sold alive lobsters and crabs to be considered fresh should be alive the lobster varies in size from about one pound to the giant size 25 pounder [Music] firms deal and smoked fish [Music] after a brine bath the smoke of a hardwood fire Seasons the fish [Music] it's preserved they can be shipped everywhere [Music] one firm deals exclusively in huge green sea turtles which are cooked for that great delicacy turtle soup the largest fish in the market is the bluefin tuna a giant of the deep which may weigh as much as one thousand pounds nearly a million pounds of fish passed through the market every day millions of fish varying so greatly in habits shape and size where do they come from the warm Southern Waters of the East Coast abound in edible health-giving fish from the Gulf of Mexico comes the red snapper from Florida waters the sea turtle Bluefish king mackerel and Pompano all rich in proteins and necessary minerals northward are found sea trout shaft flounder Croakers and sea bass from the cold Waters of the North Atlantic are taken haddock Cod Herring macro all-important food fish freshwater fish taken from the great lakes and other Inland Waters of Canada and the United States include Whitefish yellow Pike carp smelt and Trout the journey from the ocean river or lake to the dinner table begins with a catch off the Middle Atlantic Coast trapped fishermen lift their Nets which are anchored to sturdy piles sunk in 50 to 100 feet of water these nets heavily waited to reach to the floor of the ocean yield a rich catch of Bonito mackerel and porgies soon to be cooked and served in countless homes in a nearby City [Music] shellfish abound in the coastal Waters lobsters crabs and shrimp all popular items in the market and at the seafood table oysters are treated with great care and oyster beds are under constant supervision these shellfish planted like crops are harvested when they have reached the proper size oysters and clams are shipped to the market in their shelves or they may be shocked and packed in cans to be used in tasty stews and appetizing chowders when caught in nearby Waters some fish are brought by boat directly to the market as soon as the fish are unloaded they are weighed and carefully packed in fresh clean ice next to the fish itself ice is the most important item in the market without ice this huge Market could not operate the fish could not retain their fresh health-giving nutritive values so important in his vital food [Music] the catch is unloaded and an official record is kept for the transactions by doc master and Captain friend the boat is unloaded the captain will take his receipts to the wholesaler to receive cash payment each member of the crew shares in the profits the abundance and price of each variety of fish change from day to day to keep the consumer informed of the fluctuating Supply City and federal government Market Services make daily reports to the city
