we've run across in the coronet batch uh 14 pallets of films hi i'm skip alzheimer welcome to the av geeks lunchtime streaming show where my hair is kind of going a little nuts um but you're used to it you've seen it this way all the time i should just roll with it i should just put a bunch of product in it make it all stand up like um eraser head um anyways so we watch old 16 millimeter films and uh like i said that one was from coronet um this next one is from kind of the other chicago film company that was massive at the time um encyclopedia britannica uh there were other uh chicago-based educational film companies like journal films and but you know both coronet and cornet and encyclopedia britannica were the two big ones um two big studios in the chicago area and journal was actually started by somebody who used to work for uh coronet and there were all these other kind of splinter groups that kind of popped off of that but uh here's electrodynamics featuring that guy who always does narration for early encyclopedia britannica films our modern industrial age and many of the economic and social problems that accompany it have been due in part to man's discovery of how to set into motion vast numbers of electric charges and to distribute the electric current so generated far and wide like many other fundamental discoveries the discovery of electric current was a chance observation by a professor of anatomy luigi galvani in the 18th century galvani observed a mysterious twitching of a frog's leg that had been hung from a brass hook on an iron fence this was due to the passage of electric charges produced by the contact of the leg with this and iron these materials actually constitute a battery in the brass and iron were two dissimilar metals and they were connected by a moist conductor through which the electric current could pass what do we mean by electric current let us make the hypothesis that an electric current consists merely of the motion of electric charges first we should investigate some of the properties of a current if we send an electric current upward through this rod we discover that the influence of the current on these north magnetic poles causes the magnets to move clockwise around the rod on breaking the current these forces acting on the magnet disappear on reversing the current the motion of the magnets is also reversed iron filings about a current carrying wire become magnetized and arrange themselves in circles thus tracing out the motion of the magnets previously seen regions where such forces act on magnets are magnetic fields we may imagine that so-called lines of magnetic force expand outward from the wire as the charges begin to move as we increase the strength of the current these lines increase in number and spread out when the current becomes constant the magnetic field is stationary when we shut off the current the accompanying magnetic field collapses back into the conducting wire suppose we wind the current carrying wire into a coil the magnetic forces of each loop reinforce one another inside the coil and consequently the coil behaves like a magnet it possesses a north magnetic pole also a south magnetic pole if we increase the number of charges flowing through the wire the magnetic field is intensified as we increase the number of turns in the coil the intensity of the magnetic field is increased i insert into a coil a bar of soft iron note that it does not attract these filings but a current sent through the coil magnetizes the iron this device is an electromagnet the small electromagnets commonly used in doorbells or telephones and the huge devices such as this illustrate the wide use of electromagnets in industry electric currents invariably reveal their presence by magnetic fields since this is true let us now make a crucial test of our hypothesis that charges in motion constitute current we place negative charges on the metallic plates along the edge of this glass disc now as it whirls the needle is deflected by the magnetic field caused by the motion of these charges thus our hypothesis is confirmed since we have now proved that charges in motion create a magnetic field is it not fair to inquire how the magnetism of a piece of iron can be explained in terms of moving charges we will assume that the magnetism of the iron itself is due to the motion of electric charges within the atoms of the iron the magnetic field created by the coil orients these atoms so that their tiny magnetic fields are all lined up in the same direction this iron wire is attracted to a magnet when its temperature is sufficiently high the agitation of the atoms in the wire becomes too great for them to maintain alignment the iron ceases to possess any marked magnetic property as the wire cools the magnetic property is recovered knowing that electric currents create a magnetic field and move magnets faraday first asked the question can we not by moving magnets create electric fields and thus move charges thereby producing currents i insert a bar magnet into this coil which is connected to a galvanometer a current detecting instrument the instrument indicates electric current only when the magnet is moving as the lines of the magnetic field sweep across the loops they exert a force on the negative charges within the wire and cause these charges to circulate when the magnet is stationary these lines are at rest and no charges circulate in the coil as the magnet is withdrawn the charges move in the opposite direction modern electric generators operate on this same principle fixed electromagnets create the magnetic field the coil is made to rotate the current produced in the coil changes direction every half revolution and if picked off as shown the main line will have an alternating current by a different pick-off system it is possible to deliver a current flowing in one direction only we can induce current without mechanically moving parts by utilizing the magnetic field of a current circulating in this smaller coil which we will call the primary to create a current in an adjacent secondary coil when the switch is closed a momentary current registers in the secondary coil when the switch is opened a current in the reverse direction is indicated as the magnetic lines of force originating in this primary coil at the left sweep across the loops of the secondary coil they cause its negative electricity to circulate while the current in the primary coil is held constant the lines of force are stationary and have no effect but when we break the current in the primary coil the magnetic lines of force collapse and sweep back across the loops in the secondary coil producing a current in the opposite direction the amount of current produced in the secondary coil depends upon the total number of magnetic lines cutting its loops in a given time by starting and stopping the primary current more quickly the same number of lines will cut the loops of the secondary coil in less time consequently the current is increased furthermore when we increase the number of loops in the secondary coil each line of magnetic force cuts across a greater number of loops and thus causes more charges to circulate in addition the insertion of an iron core produces a greater number of magnetic lines in the primary these sweeping the secondary turns at the same rate as before cause a greater secondary current thus bringing us the picture of the modern industrial transformer since the alternating currents from generators automatically reverse their direction the magnetic field builds up collapses and reverses in the primary thus an alternating current is produced in the secondary the voltages in the two coils vary directly as the number of their loops thus high voltages that are economical to transmit are reduced to low voltages that are safer and more useful in factories and homes we have seen that the story of electric current is marked by a number of ethical events first galvani's accidental discovery of electric current followed by erston's discovery of a magnetic field about a current carrying wire then faraday suggesting that there should be a complementary effect was led to the discovery of electromagnetic induction it was knowledge of these fundamental principles of electrodynamics that has made possible the production and distribution of the enormous quantities of electric current that we employ in this modern age of [Music] electricity those early encyclopedia britannica films don't have music intro or outro just kind of gets to the to the meat of it uh somewhere i have a film that actually shows us what the narrator looks like um he's a nice guy uh let's see if i can hunt that down uh all right let's see what we've got next oh yeah we got a film uh prepped up here um on the telecini it's new ways for chicken [Music] in all the world there is probably no food that compares with chicken for the exciting variety of ways it can be prepared why then is it always fried you would think chickens were born with a covering of egg batter [Music] [Applause] [Music] people talk about the way grandmother fixes her chicken but it's not all that different from the commercial product hers too is loaded with saturated fats but hey don't give up on chicken it can be a great help in planning low calorie low saturated fat low cholesterol meals if you'll just try something new for a change a wide variety of choices available to people shopping for chicken you can buy it whole or cut up [Music] you can buy individual parts like breasts [Music] or drumsticks you have a choice of fresh or frozen this couple seems to be stocking up not a bad idea chicken is also economical color and size are the things to check in determining the age of a bird you can do things with this young fryer that you can't do with this hen the hen is older tougher and a good deal fatter than the young bird if you buy only the parts you really need you can also save a lot of waste so let's begin with a dish that uses chicken breasts chicken oriental removing the skin is a vital step in cutting the saturated fat content and excess calories of poultry with the skin and bones removed cut up each half of the breast into four pieces and season them to taste on skewers now thread a quarter of orange and then alternate pieces of chicken with a small onion [Music] pineapple cherry tomato and fresh mushroom arrange the completed skewers in a shallow pan and prepare a marinade this one uses white wine and concentrated apple juice to which are added polyunsaturated oil and spices pour the marinade over the chicken kebabs and be generous about it when finished put it into the refrigerator and let it marinate for about an hour heat up your backyard grill or your broiler and barbecued chicken oriental is on the way brush on a little marinade every few minutes while broiling or baking some provision should always be made for adding polyunsaturated oil or margarine to replenish some of the moisture lost by removing the skin turn them frequently as they cook this tasty healthful meal uses just four chicken breasts to feed eight persons you can help the family budget by buying your chickens whole and cutting them up yourself that's not as difficult as it sounds here's a quick professional method always use a sharp knife or an electric knife if you have one start with the legs severing the skin next to the body of the bird now bend the legs back away from the body to loosen the hip joint cut as close as possible to the backbone locate the knee joint by feeling for it between the thigh and the drumstick and cut the joint start your cut on the wing with the bird on its back work down and around the joint now separate the breast and back [Music] sections to split the breast into two halves push up with the fingers to snap the breastbone it will then cut easily into two pieces now that we have the parts on hand let's make an old-fashioned chicken fricassee with dumplings with careful preparation you can use a larger roasting chicken for this start by putting the chicken parts into the pot and add enough water to cover all the parts toss in a half cup of chopped onion some sliced celery a medium sliced carrot peppercorns four whole cloves and other seasonings to taste bring the whole thing to a boil then cover and let it simmer for a couple of hours or until the chicken is tender here's an important step too many home cooks leave out that no chef would ever forget removing the fat from the surface of the broth there will be more fat to remove if you use a hen than with a younger bird you may want to leave time to chill the broth in refrigeration and remove the fat layer that forms on top the remaining broth is then strained into a container large enough to hold at least four cups using the same pot in which you made the broth now melt six tablespoons of polyunsaturated margarine stir in one teaspoon of basil and six tablespoons of flour allow it to cook and thicken while stirring in the flour until smooth and bubbly now stir in the four cups of broth and let the mixture continue to cook until it boils for about a minute place the chicken parts into the low saturated fat gravy and pour in a ten ounce package of frozen peas the peas will drop the temperature and give you a bit of time before the frequency starts to boil again you'll need the time for a new kind of corn meal dumplings they take a half cup of cornmeal blended with three-fourths of a cup of sifted all-purpose flour a little baking powder and seasonings [Music] add two tablespoons of polyunsaturated oil and two-thirds of a cup of skim milk stir all the ingredients just until well blended and you achieve a stiff batter by now the chicken and gravy are hot and the dumpling batter is ready to spoon in the recipe will make 6 large or 12 small dumplings lay them in mounds on top of the simmering chicken then cover and cook for about 20 minutes longer the finished serving has all of the hearty goodness of chicken fricassee and dumplings with very little saturated fat but watch the portion sizes grandmother will think you've stolen one of her old recipes some very lively tastes can be added to chicken here's a recipe that pulls out all the stops it starts with grated lime peel and is called a lively lime chicken bake using the grated lime peel a coating is prepared with flour chili powder brown sugar and parmesan cheese [Music] with all of that blended together coat the pieces evenly in a shaking bag then in the oven heat a mixture of oil and lime juice and gently coat the pieces with that when you have them all neatly arranged in a single layer place the baking dish in the oven at 350 degrees for about one hour over the top of the finished baked chicken squeeze a little more of the lime juice add a coating of parmesan cheese and garnish this tasty treat with fresh endive or mint to complete the meal try zucchini an apple and raisin salad and baking powder biscuits with honey many of the most imaginative chicken recipes start with the removal of the bones don't be afraid to try this a sharp knife and a little practice will soon make you an expert these are thighs of course and notice that they have been skinned in advance and now we stuff them with a mixture of chopped paired apple some raisins or currants and a little minced onion and parsley this goes into the opening made by the removal of the thigh bones and when they're stuffed you merely close them up with toothpicks or metal skewers bake your stuffed chicken rolls in a foil lined pan at 400 degrees for about 40 minutes serve it with a curry sauce made from skim milk with sweet potatoes and salad as our cook now prepares for a simple but effective controlled fat fried chicken recipe here's a little reminder always wash chicken as soon as you bring it home from the market bacteria breed quickly even under the best packaging conditions and it pays to be safe normally you should plan to use it within two days of purchase unless you freeze it immediately the traditional fried chicken recipe calls for some type of breading involving milk or eggs here's the controlled fat method with the skin removed dip each piece in skim milk then coat it with bread or cracker crumbs if a flower coating is preferred you won't need the skim milk if you prefer an egg coating use egg substitute fry them in hot polyunsaturated oil and within about 30 minutes you can feed those fried chicken addicts in your house delicious controlled fat fried chicken as a healthy break from meat and a welcome treat almost anytime chicken is unparalleled just remember the basic principles for fixing at the low saturated fat way careful selection of the right age and size bird for the cooking method you wish to use cutting it up yourself to save money removing the skin removing fats from broths and stews browning in polyunsaturated oil using coatings and sauces that employ skim milk rather than whole milk spices and herbs to replace salt and the tangy flavors that come from fruit put it all together with some imagination and a bit of common sense about portion sizes and the wonderful world of chicken is yours to enjoy in good health [Music] so grant by blue cross blue shield paid for that fascinating um somebody pointed out that the chicken looked green uh and the gravy looked green and that is because of how we're kind of doing color correction on the fly uh basically uh one way that we do we deal with it is we this film was very red and so i brought down the red on the um gain and the black levels uh and then the gamma i kind of nudged it around it's the midpoint where the skin is and then i used the hue to kind of twist it a little bit so people weren't purple but in doing so it makes yellows green and you've seen this in the past when i've done showed films about eggs or stop signs or school buses they turn a little greenish so that's something when we do it on the fly it doesn't look good but then i bring it into like a program like davinci resolve and that allows me to go in and like do fine tuning of everything so that's sometimes you'll see um a faded film and it looks really good because we actually went in and we were able to adjust the the yellows and not make them green so there you go this next home is awesome um this uh i met the filmmaker for this uh years ago and uh this is a great film because it's very much of a time and it talks about um identity specifically uh for people of color and so this film has a couple of issues one it does really talk about some of the um talks about uh black power during that time uh and being assertive about that but then it kind of follows this one black student athlete and what are the expectations of him and you know and so this film doesn't answer any questions but it does ask a lot of questions and it's about identity it's about peer pressure but it addresses uh something that is certainly was an issue then and certainly is an issue now which is um race and um i want to say this is in high school supposed to take place in high school but maybe it's actually like junior college but this is 220 blues you got anything left for the relay oh yeah i think so good because when i give you that baton you better tear it like a rocket right [Music] by the way that time by sunny franklin sets a new conference record last fall [Applause] oh [Applause] [Music] [Music] so although the german immigrants in america encountered a good deal of suspicion and uh some some personal uh distrust for the most part uh for the most part they they did all right but it was the japanese americans the nisi on the west coast who suffered the most they actually were rounded up and sent to concentration camps internment camps we called them in california and idaho and we're aware of all that we know all about that at least i do i know all about the conditions that the japanese had to face during the war and in addition to being rounded up and taken to concentration camps weren't there material possessions and lands confiscated for security reasons and i know all about the concentration camps of germany and all the jews that were fried or gassed and those are just those are just two of the millions of examples of white racism that's all if you're white you're right then i know all about that because i'm a black man larry i've been a slave and a [ __ ] for you for 400 years shining your shoes cleaning your houses fighting your wars for you to save your democracy your democracy not mine because there's no democracy in this country for black people larry talk about the terrible terrible conditions of the concentration camps have you been inside of a ghetto but larry the same kind of conditions exist there i'm talking about the second world war i mean your views are are very illuminating now i don't know where you were in this class in your previous school but uh here we haven't come to the civil rights movement [Music] all right go on oh man this is some way to spend a spring vacation but do you have to drop the time then you know all right you sleeping goodies that's enough standing around let's take four laps another day live to like that division meat oh what are you gonna have huh well we're splitting this remember we're an advertiser how about a butterscotch strawberry eggnog cherry banana marshmallow stick all that hey what's happening yeah all right hey i'll get the food yeah you take care of you how you doing man nothing shaking what you got going for yourself not much what you got on your ankles just a little bit of ankle weight about five pounds worth on each side they uh you know you train with them your legs are stronger than you take them off you ten pounds lighter that's pretty good and you move oh yes you do that ain't black shoe polish you got on is it man no man what you trying to say well man a little concerned about you spending so much time with the white boy over there maybe you're messing with your brothers should be messing with your brothers man look man we just run track that's all man i can dig that but you spend so much time with that white boy you know taking a big chance there oh man they can't ain't nothing but a friend you know we just running no no friend no and you know what a friend is and a friend is a reflection of yourself your alter ego a mirror you see in your friend things you want to be like so what you're trying to say is that i want to be white you said it man look whatever reason is there look maybe i see something that uh maybe i see a good track man you know maybe i see somebody they can run fast i can do that runs pretty good yeah he does he runs pretty good for himself yeah he does pretty good but he's running pretty good for his daddy don't you yeah you're a good slave one of you has got to be the master and one of you has got to be the slaver which one you're going to be yeah man take it easy you're black sonny [Music] this is white america mr charlie stole it from the indians and took us from africa to slave in aquarium and he did the same thing with the japanese and the chinese immigrants it was always the other races man hey man i know all the gifts you dig it what are you uptight about is yesterday if you believe the white history books yesterday man listen yesterday is right now there isn't i'm not talking about something that ended and is not anymore you look at the alaskan eskimos who are losing their landslow oil companies now that's right now you look at the immigrant farm workers the great pickers you look at your brothers down the street ask them about the about the ghetto landlords and and the education they can't get in whitey schools the jobs they can't get the food they can't get man you cannot make it in white america i can't hear you man because you don't know what you're talking about i don't know what i'm talking about that's why i look at the guys in sports what about the guys in sports oh no they're good at that yeah and they're making it yeah and look at me keep a year and you will just be far out but why do you still have most of the black people underfoot you know now you gotta be aware of what's happening with black people before you can help them now how are you going to help black people if you don't know what they need man you get your degree you know and you get your position whatever that position may be whitey is still going to look at you as another [ __ ] another black man now white is going to be sending you to school paying your way to have you run so i can get my architecture man but how are you going to run and get your architecture degree when your classes are going to demand two to three hours a night on each one of them now look right now you've got wood shop and metal shop study halls you never got a book under your arm man how's that gonna change when you get in college i'll have more of a stay in the classroom when i'm not going to have any choice man because whitey will be white is the one who's going to be deciding what you do look man track is only a spring sport that's all just three months out of the year man he'll have you running cross-country fall quarter working out with the basketball team winter quarter and then first thing springford you'll be jumping doing that 220 blues man can you imagine what happens to a black mind that wants to be in a white body and go to white places and do white things and that mind's gonna get all spaced out all puzzled won't have any direction or don't know where he's at compared to anything i don't want to see that happen to you man [Music] it's just just something that i've got to do if i reject that medal he'll be a symbol of pride and unity i know that sonny i know i just don't want to see you get hurt sonny the black men who fought in the ghetto rebellions of the sixties were beautiful black warriors in the war of liberation oh man they were arsonists and looters that's all just taking our share i just don't think violence works the ones who use guns and molotov cocktails were only hurting themselves diane i don't believe there should be any peace for any man anywhere unless everybody can have it unless everybody can share it you don't have to have any fear what naturally happens tomorrow naturally happens i don't know man what's the point i can't see what the point is man the point is pride and the point is unity and you're going to symbolize that unity and that pride when you get up there tomorrow and reject that white man's token and all your brothers and sisters will be in support of you and be right there with you tomorrow up there in the stands man showing that we are together because we don't need any more of whitey's little gifts his little token offerings to us for being good [ __ ] we don't need it we've got ourselves we've got each other man but my friends man the other guys on the team i just don't want to hurt them that's all i can dig your concern for your friends man but your friend will stick with you and he'll be tight with you and your brothers and sisters who knew you before you knew yourself will always be with you regardless of what happens tomorrow man we are too tight we don't need whitey i'll think about it man i'm not sure hey uh listen um this may sound like it's none of my business or anything but well i'm still gonna ask you uh well there's this word going around school the black athletes and the black students are gonna demonstrate and uh well are you in on it i mean are you gonna do something look man you're risking a lot if they start looking at you like a militant you'll probably lose your chance for a scholarship somewhere your coach may even kick you off the team and what about diana look man leave her out of this i appreciate what you're trying to do but this is my decision this is something i have to do yeah but it's also your chance for a college scholarship just forget it man just just forget it just go on last call for the 880 yard relay all participants should report to their positions now come on sonny man come on in there [Music] [Applause] again [Applause] oh [Applause] [Music] ah [Applause] [Applause] winning the 880 yard relay with a time of 1 minute 30 and 110 seconds is [Music] ladies and gentlemen west side highs relay team will now receive division mean first place medals on the winner's platform [Music] so that was uh it's part of a show that i put together called reading writing revolution and it was films about uh school films about protests um oftentimes in odd places uh this one obviously wasn't wasn't that odd but you know lunchroom goes bananas is about a cafeteria that goes on strike and specifically it's the food that goes on strike and so it's how do you portray what is happening as far as civil does disobedience and protests in the late 60s and early 70s to schools and to uh students and so it's interesting this film uh i talked with uh i met ed leinbacher he sent me a bunch of his films um of which i think we showed one it was a oregon um or seattle world's fair film about seattle um i feel like and it was like in some weird uh aspect ratio but anyways um it's a fascinating film and you think about like would this film be shown today uh and that's what i like to think about is like you know would such a film be uh shown in a contemporary setting is there a contemporary version of this and so this brings up a lot of questions um about you know the student um our our main character you know is who is he what is his identity you know so it's a lot of a lot of questions and so these films are fascinating for me um anyways uh i got one short thing to show you um it's i need to adjust it it's uh fashion venetian blinds so here we go [Music] uh bye [Music] and then it just ends um so this was from a uh fellow collector who i've been digitizing their stuff of which we've been showing some things and this is obviously uh something that somebody put on ebay this is ebay is a wonderful and really horrible thing um especially with film where people will he'll take a piece of you know an actual film and then they will cut it up and sell the individual parts um so in the context is lost and i have certainly purchased things on ebay because i'm like well that's interesting and then i get it and it's all you know it's just a snippet but um this one just baffles me man like what is this is this a musical interlude to start talking about how wonderful venetian blinds are for you know for uh houses or for offices like i don't know and so we might never know um because of that and this happens a lot on on ebay like i said especially with home movies where somebody will take a whole home movie and they'll cut out segments that they know will sell well like train footage or you know whatever and so it's very very frustrating um but still that was pretty awesome even out of context is like what what was that um thanks everybody for tuning in today um if you like what you saw you can certainly buy
