like I'm sitting in a throne I'm not actually at the archive today uh I'm at emea which is the association of moving image archivists conference in Pittsburgh Pennsylvania and so because of that I'll be showing films about Heinz uh the ketchup people and condiment people which is based in Pittsburgh so I have two films that I'm excited to show you also uh We've interviewed some folks uh at a conference uh Workshop that we did today it was a community archiving Workshop where we helped catalog a bunch of materials for a local non-profit and I saw some people there that have watched the Mr Jefferson to pay his respects who Mr Thomas Jefferson the new Minister from America Oh yes most certainly but you're enter please welcome my friend welcome oh you are oh Amelia sprain oh please sit down thank you tell me how is General Washington busy as a beaver with plans for the Constitutional Convention that is why they need Benjamin Franklin we are sorry to lose Bishop Franklin but glad you replaced him I succeed Mr Franklin no one can replace him but I came to ask directions to Turin to win Italy yes my doctor suggests a brief vacation while my arm heals and I thought it a good time to review farming conditions there the farming view yes I guess I'm still a farmer at heart you should see my farm in Monticello now but it is the future of America which I am thinking and I owe it to my fellow Farmers to take them back all the information that I can and I hear such glowing accounts of the tomatoes in Turin and the Piedmont rice Tomatoes oh I believe you call them love apples although it's export of a single for a few grains of rice well that's Restraint of free trade out to them in Turin I will [Music] but that is restraint and free trade but what would you he did the law but if one could take out just a little bit at the board that they search you and if you are caught a smuggling out ever so little up comes your head are you sure maybe you're lucky in the shooting now we had better content yourself with love apples they help you to make love they have tried the Grand Passion what good is love if you're dead yes I see I won't take the one without the other well maybe I could take two small six through the appending and my donkey but only agree in advance all certainly there you won't fail me now I'm honest ly [Music] foreign [Music] but I only took it to teach him a lesson I swear now be gone or I'll teach you a lesson [Music] [Applause] foreign [Music] [Music] [Laughter] I told you the trip would be fruitless but it wasn't I found a new species of tomato by which the Italians make an electrical paste and their rice is just what we need for the Carolinas yes yes too bad you couldn't get any of it out of the country but I did what I thought you said they said you were Special Care they did everywhere but in the bandage of my sprained arm which is long since well look nine [Music] 10 11 12. there you are Jonathan a round dozen of each thank you Tom sorry I couldn't bring more but we'll make them go as far as they will 12 rice seeds and 12 tomato seeds to each of you as long as they last what the tarnation uses these Tomatoes ah good use Jonathan where the old Aztecs ate them for centuries and the Italians eating them now and there are Folks up in Salem and down in New Orleans eating them we eat them at Monticello and I'll wager that after you've raised them your folks of eating them too uh nine ten eleven twelve thank you Tom you're welcome Giles all I ask is that all you Farmers give them your best care rice can be one of our greatest food crops in the southern states but Tomatoes may come to be grown in all our states foreign [Music] picnic yes going to all this trouble for a farm here when you could have had that nice city fellow from Columbus what that dude Alec Livingston's all right oh man Grime says he's the best hand he ever had he says he's got a regular knack for growing things like love apples I suppose Tomatoes ma Alex says when people get over their Looney soup stations everybody are raising me just like potato he's the one that's loony I don't know more more and more people are eating them every day to hear him tell us don't he ever talk about anything else [Applause] there he is now where's the picnic at [ __ ] Island if you ever get there wouldn't surprise me if you spend the day in a tomato patch oh [Music] hot isn't it yes it is but it's a beautiful day whoever said it always rains I Wish It Would Rain pretty soon I'm trying out a new kind of tomato it ought to have more moisture wanna stop by and see him a minute oh I'd love to get out [Music] it's been a wonderful day Matilda glorious the lunch was good too glad you like I hope you didn't spoil your dress oh it'll clean that many girls would give up a picnic to carry water like you did didn't I suggest it I bet your mother should be surprised you spending your whole fourth of July in a tomato patch not Berry what I mean oh I don't care I I loved helping you I love to watch it with this man you seem so so inspired you make grazing Tomatoes seem so so important it is important giving people better Foods about the most important thing there is a Matilda I've got a chance to rent the old Clark Place 113 Acres I can raise enough other stuff to live on and plant the rest in tomatoes developing bigger and better ones than there ever was before time sell the sea all right I mean I could have if you'd help me if would you marry me Matilda would you good night say I'd love to help you yay [Music] foreign [Music] they look awfully nice where do you see them next year we'll pick just the best ones for scene then the next year just the best of them and pretty soon we'll have a more big and round and smooth without these creases you're a remarkable man Alex how long will it take few years not many you'll see [Music] no use fooling ourselves any longer I'm a failure no you're not it's been 15 years but some of them look better than ever don't you think only a few and I was so sure 15 years ago every year we took only the best fruit for seed but every year they came up the same some good some bad most of them just Midland same plants some little scrawny ones and a few extra strong healthy ones like this one here that is a nice one if we could only say say maybe that's it what's it we've been selecting the best fruit regardless of the plant it grew on the seed reproduced all the old plants characteristics bad as well as good we started taking only the best plants and use the best fruit off of them Matilda I believe my soul we've got it [Music] yesterday this is the third year of the new experiment and I know now it's going to be a success fine at last good we'll put the seeds on the market right away no not yet why not well I I want a few more years to make absolutely sure you've already been at it for 18 years I'll be out at 18 years more if it takes that long I'll let you know when the seeds are ready [Music] use only the ripest ones son they make the best C PM now I think that's enough poke spread it out to dry all right holler when it's done yep well gentlemen I've called you here today to tell you that at last we're ready you mean we can put the seeds on the market yep the good characteristics are all set now man do you realize what this means up until now there hasn't been a single acre of tomatoes in the whole United States that would produce one bushel of good ones in this Paragon tomato will it'll produce uniformly good fruit on every plant oh that's fine aw you know all these years I thought I'd be tickled to death when this job was finished but Now dog gone it if I ain't a little bit sorry it's over it's not over aw what I thought this tomato business was a fad but it's not more and more people are planting them all the time now they'd like an earlier tomato and what's more some of the big food preservers have taken it up like h.j Hines over in Pittsburgh they want fewer seeds all right hi you mean you'll undertake these further varieties I certainly will you have any idea how long that will take hey Pop give me another 10 years and I'll produce a tomato that'll tickle even h.j Hines himself Mrs Livingston your husband is a remarkable man I could have told you that years ago [Music] foreign [Music] two five acid 0.31 and sugar 2.58 that's spinning everyone I know it doesn't seem possible after all these months and years but at last really finish the chemical analysis of varieties of tomatoes from all over the world that's what Mr Heinz asked for you've been working pretty hard doctor especially these last few days you ought to get some rest as soon as I see the director after that I'm going to bed and sleep for a week so now we know it is possible to control the desirable carries of a tomato yes sir Livingston had to depend on trial and error but that was before mentally Austrian monk discovered the mendelian law of plant genetics now we know we can breed in or out any plant character we choose and you really think a tomato can be developed with all these good qualities all in one I'm sure of it very well and get a copy of this off to our experimental farm right away and let them start cross-pollinating or it won't happen overnight sir but I promise you five years from now Heinz farmers will be growing regularly Tomatoes The like of which the world hasn't even dreamed of up to now well go to a doctor and by the way congratulations you've proven the value of chemistry in developing a better tomato thank you [Music] before we enter into this contract with you Mr Corey I want to tell you a little about what it means to grow tomatoes for Hines I know a little about it Mr Barnes I'm new in this section but Earl and Gilder he's raised for you for years tell me something about it my Farm's the first one east of his oh yes I know the place we'll test your soil I think your South 40 could be put in shape very easily with four 24-12 fertilizer I'll do whatever you're saying we feel that you will follow instructions all the more carefully if you understand fully what's better to the Heinz companies the growing and preparation of food is a sacred trust yes sir we furnish the tomato plants because we grow a particular type one that is best suited to our product and at the same time one that is most profitable to the grower I see years ago one of the many scientists of our Quality Control Department began to analyze tomatoes from all over the world and select the best types which were then developed by one of our own scientists who's known as one of the world's foremost tomato culturists it's done through cross-pollination in our own greenhouses he selects his plants for instance it might be a San Marzano imported from Italy with low acidity in high sugar content with sterilized shears Cuts away the cluster of emphas and the blossom leaving the naked pistol through the magnifying lens we see the tiny Bud of a new tomato at its base he then moves to the other plan selected it may be the mar Globe developed by Pritchard out of Livingston's famous Globe tomato fine fruit with vigorous foliage this time he collects from a protected Blossom a tiny quantity of pollen dust upon the tip of a brush he transfers the pollen to the pistol of the first plant gently brushing it on the moist stigma end small perforated glassine envelope is slipped over it and clipped there so nothing can contaminate it when fertilization is complete the envelope is removed if it were possible for you to watch the Tomato grow before your eyes if you could somehow condense days of growing into fractions of seconds you would find by force growing the tiny butt expanding and developing into ripe red luscious fruit containing all the characteristics the scientists wished it to have characteristics that make the Tomato one of the most nutritious of fruits at the peak of perfection it is removed from the plant it seeds carefully extracted washed and treated then replanted and the whole routine gone through again year after year even under ideal growing conditions it takes eight years or more before we will concede that the seeds are ready for use and stop the seedlings which are to be entrusted to you the seed beds are made ready with soil that has been completely sterilized around the middle of March trains with fingers sow the seed when the seedlings are about two inches higher they are transferred to Flats to be thinned out and transplanted by our girls then we take those flats and place them in Long underground glass covered cold frames where they attain a steady height of 8 to 10 inches that brings us up to the middle of May when the first of our young pedigreed plants are ready to be distributed to our contract farmers of course the routine is staggered so that we can distribute plants for a month or more which will give you time to get your feel ready no wonder you folks are so particular about who handles your plans you bet we're particularly and another thing you agreed to deliver Tomatoes at a specified time and I mean the precise hour of a given day I'll give you the exact schedule as the harvest season comes around I understand all right Mr Corey I'm going to sign this contract with you oh thanks Mr Barnes you can count on me I am sure of it and in no time at all you'll be out there putting in your own plans [Music] ah I thought maybe you'd like some cold tomato juice thanks honey not there for the boys too uh plenty how are you getting along wonderful the ground's in great shape and the plants are perfect you know if we can have a good crop this year Heinz will take us on steady that'll give us a cash crop every year at a guaranteed price it'll be all right it's got to be thanks honey I'll send the boys over well so long Eddie [Music] who is that it's a Hinds man I'll check in the crap what do you say everything's swell swell [Music] foreign two weeks ago when Barnes was here they were all right now they've got black spots on the leaves if we lose that crop now why don't you find the Hines man yes I'm going to all right Eddie keep your shirt on I'll be right out cleave spot comes in warm damp weather like mildew on your wife's roses sometimes oh is it bad yes some it kills the leaf that feeds the fruit but you've caught it in time if you dust the whole field right away how am I gonna dust 40 acres right away well there is one way well that's got it is it all right now yeah everything's gonna be okay we caught it just in time already I'm so thankful maybe you think I'm not oh say Eddie Mrs Van Gilder was telling me this morning she works at the local Heinz plant during canning season lots of the women do look forward to it every year gives them extra money the highest people like it because they're all accustomed to preparing food in their homes all right I was thinking that I'd kind of like to it's only six weeks out of the year Mrs Van says she thinks she can get me on and play some Mrs Hogan doubler who moved away wow you think you really want to well then we could buy the furniture for the spare room I think it'd be fun okay looks to me like we're getting to be a regular partner of Heinz [Music] seems like they're always washing this place the government inspectors are taking their places on platforms that means that trucks will soon be rolling up we better get started this is a busy day for us Eddie's crops do today at the plant at two o'clock [Music] [Applause] [Music] foreign [Music] we'll be ready for you in a moment oh pretty busy that's right that's why we have the tomatoes delivered on schedule this way neither the farmers nor the tomatoes have to stand around for hours parboiling in the Sun [Music] if you had time to follow these Tomatoes you'd see them dry sorted then dumped into the first washer rolling over and over under a water spray of 300 pounds pressure into the soaking tank then under another spray for the third washing next onto a moving belt where girls on the other side pear and trim as necessary this is the last time the tomatoes are touched by human hands after this they go through their fourth washing thence to the skull or and popping machine to remove pulp seeds and skin after which they are pumped through glass lined pipes to the kitchens for cooking from here they are piped to the bottling room the bottles come out of the sterilizer Glide along the conveyor to the filler then onto the Capper from here they move through the cooler to the labeling section and there you are this morning those ripe red luscious Tomatoes were growing in your field this afternoon their Heinz Ketchup or chili sauce or hind soup or tomato juice as the case may be wow talk about friends that's the idea now let's have a look at the automators thank you I just got home myself how is everything here are Mrs Edson Corey is the check for the tomatoes and here is the contract for next year oh honey we're on our way isn't it wonderful yes it is kind of wonderful as being a grower putting things in the ground and watching them grow working for a company like Heinz makes the sort of feel as if you were part of something something big something that's been going on for a long time ever since Eden I guess giving the world better food making it more fun to be alive [Music] foreign [Music] Hagen and we both are wearing this super tape shirts and Siobhan is the founder and what is your title I'm just gonna go with founder you know cheerleader yes uh and you can get these awesome shirts from armia also some umatic label uh yes we've got the umatic um we actually have two umatic T-shirts one that just is like 1971 the year of thematic then we have one of my favorite like Sunset sort of Astros 70s baseball kind of look of a gradient Humanity that's good how quick is that print because I don't want to change my nipples oh that's tough yeah I haven't if it's anything like this it's nice and soft so to go to buy them marmia.org marmia.org um and then if you go to um portals I think and then you we have a shop on bonfire.com where they make the nice shirts and so to give us money for it today we're watching films about uh Heinz products do you have a favorite Heinz product uh ketchup ketchup all right sweet yeah so go visit marmia.org yes thank you and thanks for the shirt yeah all right awesome laughs [Music] [Music] [Music] foreign [Music] [Music] foreign [Music] [Applause] do you hear that it's gone man the people are beside themselves with joy and it was such a little Victory but there will be more and greater glories Italy than Austria then England who was a victory that will be my soldiers cannot eat victory what do you mean our greatest enemy is not England or Austria or Italy it is scurvy an army marches on its stomach ours are living on salted meat and stale bread they say living you're dying dying like flies not gloriously in battle but miserably slow starvation you say no way [Music] [Applause] [Music] there must be some way to preserve fresh food on the March you know ask the directory to issue a call to all Patriots the man who will find a way to keep food fresh and wholesome over long periods A Grateful Nation should reward him well yes [Music] [Applause] [Music] [Applause] who knows somewhere in France perhaps somewhere in this city at this very moment there is an unknown man who would be the true savior of France [Music] [Music] yeah Nikola it is late huh what oh you will kill yourself all day long in the shop all night long in the kitchen look mama my new bottles those others too small in the neck face I can't put in big pieces of meat and whole vegetables oh you have put so much in that one it is running over that's to get the air all out of it Mama the food keeps better when the air is out why is that I don't know but it is so I wish there was somewhere to seal it tight I put three four layers of cork in it I turned them against the grain I cover them with parchment I do the best I can but when the air gets in the food is all spoiled yeah now this time I'll put this one hour and 10 minutes Mama the cooking is done oh it is too bad Nicola it is the glass bottles when the fire is too hot the bottles break when it isn't hot enough the food spoils oh man I tried again tomorrow listen to me the directory has offered a price of 12 000 francs for the men who can tell them the best way to preserve food for the Army twelve thousand francs yes you must see them right away what chance have I competing with men of means and reputation not poor equipment nobody knows me but they will know you already you know more about preserving food than any other man and Friends you are going to the directory and tell them what you know this reporter viewers interests me greatly thank you Mr camise but preserving food stored in your own Cellar is one thing my friend and preserving it against the records of travel and the change of climate and that is quite another but I have done that tools how do you mean I have sent out my little bottle on ship for one year on the situation far across the equator far south under Mary Louise are tested in every climate and hymns should come is here here are signed proofs from sheep captains and Port prefects all over the world saying the food kept fresh Affair it appears to me to be of moment to spread the knowledge of your processes for the conservation of animal and vegetable substances I desire that you write an exact and detailed description of these processes and we then shall talk about the award [Music] [Applause] [Music] thank you so it doesn't appear this payment is long delayed Middle East 12000 francs scored a gratitude of all France and the warm esteem of your emperor Emperor you've made a contribution to life not only for our armies and navies but for our citizenry as a whole there will come a time when the whole world will bless the name of a pair [Music] [Applause] [Music] oh come in Peter Duran and how's the best pickle and preserver in all Middlesex this fine morning oh not so fine oh another battery preserves went wrong yes what you need a good cup of tea get me that tea canister there foreign myself I don't know what's the trouble that Frenchman a pair has done wonders in the preserving line but he admits himself as more than a bit of luck to keeping food it's so hard to get the bottles airtight and then like is not the break cooking it's too bad there isn't something else you could put up the food in oh I've thought of that I've experimented with all kinds of glass I've even tried Earthen pots now if I could only find something that would stand the heat like your tin Kettle there only shape more like this canister [Music] and excuse me but Peter your team [Music] Jeremy can you make a tin canister a watcher like this tea canister only of tin metal well it's never been done before as far as so anyway see but there's always a first time for everything and as I always says why not I reckon so all right let's have at it [Music] [Music] there's your tin canister sir fill it with whatever and I'll solder the top one for you bye job I think we've hit if this thing works how many of these could you make in a day all day yes yes all day how many would say about 50 or 60. but would you have views for all them team canisters I have a feeling Jeremy that we're going to use millions of them Millions I'm so proud of you Peter your tin canister really works doesn't it yes at first they swelled up and burst the contents expanded under Heat but we've solved that by leaving this small dent in the top and then soldering afterwards I've been preserving peas all week I'm not a single canister birth why Peter that's wonderful I've got the pantry filled with them now what's that the pantry oh foreign did tell me oh [Music] yes Professor we understand about yeast fermenting bread and wine and beer but what makes Milk so there is no yeast in that is there no some so-called scientists would have you believe it sours from spontaneous generation but I am convinced that the ferment of milk is just another plant much like yeast bacteria and that these bacteria are present in nearly all foods how do they get there they are already everywhere in the air in water and so minute that 30 million of them can live in a single drop and every time I breathe or take a drink I get millions of plants do they grow inside of me you you need that worry about them anyway not all of bacteria are harmful some are beneficial in fact the very existence of men and animals on this Earth depends on some of them but bacteria in food will I maintain ultimately destroy it if they are not themselves destroyed for years now all preservers from appear on down have experienced great uncertainty in keeping food fresh some of it after having been sealed up for days decayed and the resultant gases exploded and burst the containers if I am right and I am sure I am they could correct this once and for all simply by heating the food hot enough when sealing it to kill all bacteria there are heat resisting bacteria which merely boiling point will not kill Sir Humphrey Davey tried adding calcium chloride that raised the boiling point some but but not enough cooking in a closed chamber with steam pressure will do it but anything that will kill all the bacteria in the food and seal it that way will positively preserve the food fresh indefinitely Or my name is not Louis Pasteur [Music] foreign [Music] [Music] [Music] foreign [Music] the clock suggested you might help me at your service sir my name's Underwood just off the latest packet from England firm of McKee and Company Limited London no doubt you've heard of us no Norah I can't say that I have picklers and preservers I'm here to set up a preserving plant in America if you know of anyone who'd be interested in joining such an Enterprise I won't know anyone interested in a pickling business nor any other business from England I'm sorry sir but New Orleans is filled with men who only a few short months ago stood out there in the swamps of Andy Jackson and fought off your soldiers from England these gentlemen were there I was there and my son is still there you won't find much welcome in Orleans for anything English sir and now he will excuse us sir [Music] [Music] you were right I can do nothing in New Orleans I leave tomorrow for Baltimore in your state of Maryland I understand there is the center of American population what's her between here and there is a fast and bloody Wilderness Savage Indians and Renegade white men the old man could never get through alive you had best returned to England my passage money has been long since spent I can't walk to England and I must perform walk to Baltimore [Music] [Music] three two [Music] [Music] [Applause] thank you [Music] thank you [Music] foreign [Music] love apples now love apples great Christopher what for to eat they're poisoned some say they eat they call them Tomatoes now tomatoes I don't know here's a jar of that new batch of tomatoes you asked to see Mr Underwood oh yes Thomas oh this looks pretty good how often does it turn out this way well almost every other time sir hmm well I suppose if we hit it right half the time we ought to be satisfied we've got a pretty good foreign market now our own people just don't seem to take to preserve food they say they're too expensive I know well I don't see how we can make them much cheaper and we're getting competition now too who's that sir can't sit and dag it down Baltimore they're pickling oysters very place I tried to start up 10 years ago and couldn't well well maybe in 10 years more [Music] now let me see where was I oh yes our industry is still a puny infant though more and more preserved food firm seem to be entering the field all the time unfortunately the uncertainty of preserved Foods even yet plus the prices we have to charge for them keeps our domestic trade scattered and small however we press hopefully forward [Applause] within the month we have adopted the English invention of the tin vessel tin canisters they're called uh what is this Mr Henley what this word at the top of the column c a n s oh that's an abbreviation used by our bookkeepers for canisters tin canisters was too long for their columns so they cut it down to tin cans tin cane make a correction in that last sentence I gave you we have adopted the English tin canisters only Americans call them tin cans [Music] foreign [Music] Massachusetts boys and there'll be boys from the Carolinas from the other states so it's north and south oh why must such things be [Music] but they all must be fed this preserved Food business was started by one war now it will be enlarged by another Underwood and Company Parker and Jones of Maine Duck wall out in Ohio and hikers Like Us in the South Isaac Solomon of Baltimore mcmenamin and Company of Virginia and all the rest be working full blast the fat Frenchman Pasteur is right in his theory about bacteria well in this canning business or to take a new lease on life but after the conflict was over canned foods again encountered public indifference they were still too expensive and of Uncertain quality then in 1869 there appeared on the horizon a new figure in the canning field a tiny figure at this time to be sure but one destined to mold and shape the future of the industry in this little house he began this young man whose principles especially fitted him for leadership for he was quality-minded and he believed that the preparation of food for the public was a sacred Trust a few short years before at the age of 12 he had tended the family vegetable garden supplying the home table and marketing the Surplus to the neighbors when he was 16 the garden had grown so that he now employed three or four helpers and had developed a market for three deliveries a week to Pittsburgh Grocers good morning Mr Smithers good morning Henry say those are nice looking tomatoes I could use more of those yes sir I'll bring them in I wish you would I'm using all get out here sorting aggressor has to spend a lot of time starting over his green stuff every day doesn't he do you believe much time but you got to do it what would it be worth you Mr Smithers to have all your vegetables sorted for you and only the best brought in well that'd be worth considerable aside from saving all my time I'd be willing to pay a little bit more in order to get to top grade thank you Mr Smithers that's what you're going to get from Henry Hines from now on only the top grade say that's fine by the way Mr Smithers watching those green bottles are there on the Shelf that's horseradish but why do they put it in green bottles so it won't show the turnips in it I reckon say Mr Smithers could you use a Pure grated horseradish put up with vinegar without turnips or anything else like that packed in clear glass bottles then people could see what they're getting and know they're getting the real thing yes sir Henry Hines people would want that kind of horseradish and right then and there was the order taken for the first Heinz product and that was the beginning of the two fundamental principles in the Heinz business first that quality and uniformity without adulteration or artificial preservatives command a premium and second that the only way to run such a business was to make the product the best he knew how at the lowest possible cost consistent with quality and to charge a reasonable fee for his services it was at this desk that the founder of the company handled his first books in 1869 the Ernest young Pioneer was 25 years old this is my goal to do a common thing uncommonly well to bring home cooking standards into canned foods making them so altogether wholesome and delicious and at the same time so reasonable in price that people everywhere will not only welcome them but will find that they can afford to enjoy them in abundance not only in the United States but throughout the world the world shall be my field [Music] h J Ines at his desk retained the vivid memory picture of the typical [ __ ] and span kitchens he had known as a boy the housewife of his day may never have heard of counting calories or adding vitamins but she did know how to prepare foods to retain their full Rich goodness and young Heinz knew it was achieved with perfect sun-ripened fruit and garden fresh vegetables combined under the cleanest conditions with the finest meat and dairy products with generous use of butter cream and eggs cooked fresh daily and in small quantities that is why the cooking in the great Heinz kitchens is done in comparatively small quantities that is why only the best in fruits vegetables and meats and all other ingredients with the same generous use of Rich golden butter and good thick cream like the best home Cooks use are prepared under the most Immaculate and healthful conditions and has it been realized this dream of service by this young man h.j Hines company under the leadership of Henry J Heinz himself assisted by his young son Howard Hines and Sebastian Mueller vice president of the company was one of the chief Crusaders for a Pure Food law along with Dr Harvey W Wiley then of the United States Department of Agriculture use of artificial preservatives and coloring was opposed as a result of this Crusade the first Pure Food law was enacted in 1906 president Theodore Roosevelt took great interest in this protective measure and after its enactment Howard Hines called on him at the White House in regard to the use of benzoate of soda which the law still permitted you realize I suppose what the strict enforcement of this law you help to enact is going to do to your business you will have to disclose the use of benzoate of soda and artificial coloring but we don't use either well whatever it is you use to preserve Foods you'll be forced to divulge secret formulas we have no secret formulas we just work on the principle my father established if you have good food cooked properly and in clean kitchens you do not need artificial preservatives or coloring that's our formula Mr President and we'll be glad to tell it to anybody probably for you I congratulate you on the preparation of your products by such Advanced methods h.j Heinz company not only assumed leadership in the movement to enact your food laws but also conducted an educational campaign through the newspapers to show the necessity for the Law's enforcement within a few years practically all use of benzoate of soda was abandoned by food manufacturers Heinz leadership for Pure Foods was a great Boon to the public today Howard how pleased must be the shades of our pair and Pastor to see the research in the preservation of food they started being so ceaselessly carried on in the various Heinz experimental labs in the famous melon Institute with which the house of Hinds is so closely linked and where many new Heinz products find their Inception through participating fellowships whereby hind scientists contribute to continuous research in food in the quality control department where in contrast to the uncertainty of those early caners Heinz scientists see to it that every batch of every one of the 57 varieties is at its constant uniform best in the experimental kitchen where Master Chefs from this country and abroad are forever trying this and that to see if they can possibly improve the taste and last but not least the home economics department where skilled home economists continually experiment to find new healthful tasty ways to serve preserved Foods a boon to Modern Housewives not only did h.j Hines study the exploits of our pair and Pasteur and build upon them but can you imagine how Peter Duran's eyes would bulge if he could see his production of 60 cans for a whole day stepped up by Heinz to 2 000 cans in a single minute in one Factory alone in other words the little lad who started out with a Market Basket on his arm graduated to a wheelbarrow and then to horse and wagon continued to develop till he had further refined the processes of preserving food till it became in reality home cooking put up in cans and live to see the now Universal use of canned foods in this country and around the globe his original three-quarters of an acre of Pennsylvania garden plot has grown to over 200 000 acres in every part of the world giving work to thousands and feeding Millions we have indeed come a long way since up here started preserving food in glass bottles through sterilization by heat this great human story even now is unfinished tomorrow there will be more new products more new services for Humanity founded on the principle that the preparation of food is a sacred trust the house of Hines will continue to apply and amplify the science of the past with the discoveries of the future scope has grown into World size and World significance its products now going to more than 100 countries around the globe it is proud to remain essentially a simple business Heinz will continue to try to do the common things uncommonly well [Music] start recording all right I'm here at the community archiving workshop with Stephen Haynes Stephen you actually watched our show yeah on Facebook is that right uh yeah yeah usually on Facebook back back when it was on Facebook yeah I mean I linked to it but Facebook has been a big pain with me recently so because of some Soviet films that I showed um anyways uh so you have a collection of 16 correct yeah that's right and you do screenings here under what name uh flea market films uh mostly but also we've got a new thing going this year Pittsburgh sound and image sound Plus image nice um yeah so you can look look from what I'm up to under those all right and so today we're showing films about Heinz and do you have a particular favorite condiment I have like three different ones here to choose well uh when I was a kid I was way in the ketchup I'm kind of not so I mean I always catch up occasionally but I'm not you know I love mustard You Wanna Give me a hot dog just put some mustard so this uh this how does this compare to it so your your French's Mustard uh you know I'm usually I'm usually more of a brown mustard yeah me too and then what about mayonnaise has mayonnaise made its way into your life yet I mean maybe occasionally here and there but I'm not I'm not too too and you said you collected some Heinz films that's Canada yeah somebody on the uh 16 millimeter film collector Danny Bailey I'll give a shout out to him he posted like two years ago and it was in 2020 because it was everything was still shut down a collection uh in Canada for sale and I said this is Pittsburgh program and gold I need to bring this to Pittsburgh and so I got it from him but the thing was the Border was closed for like another six months or something so I had to wait I had to wait and wait and wait and then finally wait for the board so yeah went up to Canada and got there I have never actually driven into another country to collect films I have gotten films from another country and actually you know I take that back I did when I was in Albania I did get some films in Albania that I snuck back in my suitcase but yeah to actually drive that's pretty amazing it was great it was a great uh yeah it was a good experience and I'm thrilled with the films I haven't I've dropped a few in the shows here and there I haven't done my all Heinz show it's coming though 2023. look for Pittsburgh nice all right well thanks for joining us it's good to see you in person likewise yeah all right Sarah do you want to come yeah yeah we have so that we we did this Workshop uh at a local University where a bunch of us archivists got together and helped it was kind of like a barn a barn building where we all came together used our expertise to kind of help catalog films and Sarah joins us you're from Chicago yes I am from Chicago and um do you want to say who you're with or yeah from the media burn archive in Chicago which is a collection of mostly documentary films uh or not films all video tips yes and then I totally recommend checking them out um because I did a project long ago even before you were working there where we digitized a bunch of media burn stuff for the internet archive and it's phenomenal stuff from the 70s and 80s really uh captured what was happening culturally in Chicago but also in the country so totally recommend that um and so you said you watched the show a couple of times yeah yeah I like it I I you find things that are just I haven't seen anywhere else they're just fun and stuff that's crazy and wild and uh you show me the best of the thousands of many thousands of things that you've watched yeah so you don't have to watch them all yeah yeah that's what we do we we sort through all the chat actually we show a lot of chat uh on on our show but um so we're showing films today about Heinz because Heinz is based in Pittsburgh and that's where we are so is there a Chicago condiment company you know I'm unaware of there being a Chicago condiment company but um I don't know if you're aware that in Chicago we have very strong feelings about hot dogs extremely strong feelings um Vienna Beef is headquartered in Chicago and you can get a great Chicago dog almost anywhere but if you put ketchup on your hot dog you will be ostracized it will be required to leave the city so I understand that I see this and I am medium like what about mustard is mustard okay yeah mustard has to go on yeah there's a list of um you have to you know I'm actually not all that much of a hot dog eater so I don't know that I'll get this right but I think it's mustard relish onions celery salt and then there's these weird little sport peppers I don't think I'm forgetting anything yeah we call it running it through the garden I think I've heard this is how Chicagoans get their vegetables because there's all those great vegetables on it all those pickles nice all right so is it mediaburn.org it is mediabird.org and you have videos up there yeah we've got I totally recommend checking it out it's uh and especially if you watch PBS in the 80s because a lot of that material I saw when I was in North Carolina on PBS and uh it's great to watch it again and kind of realize like and remember what was happening culturally at that time because they talked about everything about food you talk about work you talk about uh Sports uh you know all these these things that are just kind of interesting from that time period so I totally recommend that thanks so much sir thank you yeah so it was kind of a deep dive um these promotional films were really long and it makes me wonder like where they were shown uh it could have been something that people would uh rent or check out and it would be sent to like uh like a men's group or women's group it could be shown at like a fair um maybe on television although they seem kind of early for that so uh anyways um thanks for joining us today I hope you liked meeting some of the the people uh these people are very near and dear to me because they do what I do but they do it in their town or city uh with their own materials and so hopefully you'll check out some of those sites that the people were talking about um we'll be back again tomorrow so we'll see you soon
