hello everybody i'm skip alzheimer uh welcome to our lunchtime streaming show um i'm here live now and but i'm about to sit down with some immediate family members that we've been bubbling with um so and and to have uh thanksgiving meals um but i compiled a bunch of uh parade footage because i love parades and also everybody our favorite summer that's how you can tell it's live um and also some of our favorite thanksgiving meals that we will be playing and shuffling through a playlist but i'll be periodically kind of checking in and saying hi but uh thank you so much i hope everybody's having a safe and sane thanksgiving today and it's restful and um we love you very much we thank you so much for you your support uh watching us uh every day has been really great so everybody enjoy the parades uh a lot of this is going to be silent unfortunately but the films themselves that have about thanksgiving will have sound so i apologize i tried to find some ambient parade footage uh sound effects that i could just loop in the background but it just did not work out so here we go here's the parade everybody take care and i will talk to you soon i'll see you tomorrow all right [Music] foreign [Music] i'm bill johnson around here they just call me dad i've been trying to read but i just can't seem to do it i keep thinking about today thanksgiving day we johnson's had a good thanksgiving the best we've ever had i can't help thinking that what made it better was a feeling a real feeling of thankfulness and that's odd too when you consider the shape things were in when i got home from work yesterday my kids dick and tommy and susan were all home from school and of course mother and the baby were there his kids will mine we're living tomorrow right along with today looking forward to thanksgiving and like most men i'm glad it was mother instead of me who had to break the news to them tomorrow's thanksgiving mmm turkey and dressing and pie and cake and fruit salad and whipped cream and cranberries gee i can hardly wait me too well you know children we've had a lot of expenses this month and well your father and i thought that well the truth of the matter is there just won't be any turkey this year no turkey for thanksgiving oh i'm going to make a pumpkin pie we'll have plenty to eat but well we'll just have to get along without turkey mom you don't mean it it won't be thanksgiving at all even the pilgrims had a feast after all isn't that what thanksgiving's for i don't think it's fair and it was right there that i came in right in the thick of it hello everybody no mother dick susan for what's been going on around here what's the matter with everybody anyway mom says we're not gonna have any thanksgiving no turkey no good thing a fat lot we're gonna have to be thankful for oh i don't think you kids really mean that we do too we've always had turkey for thanksgiving yes and everybody else in the block's gonna have it this year same as always yes we've always had turkey just as a lot of americans have had it and we'll keep on having it turkey on thanksgiving's a great american tradition but what you kids are saying makes it sound as if the turkey is the only thing we had to be thankful for well gee where's no dad it's not that at all well i know dick with turkey it's easy to lose sight of what thanksgiving really mean and don't think we're just making excuses because we don't have any turkey this year we well we know it'll mean a lot more to us the next time we do have it well sure suppose we don't have a bang-up feast we're still a lot better off in the pilgrims that's it dick do you other kids see what dick's trying to say turkey or no turkey we've still got all the freedoms and privileges the pilgrims gave us those privileges have come a lot of things things the pilgrims never even dreamed of why we could make a list a mile long why don't we do it now hold on a minute you've got the idea but it isn't something you can write down like well like a grocery list you've got to feel it down deep before you can really be thankful for anything i tell you what let's do and let's take a little more time to think this over when you get right down to it there are some pretty tough decisions in making up your mind what means the most to you your life sure that's one thing you can't get along without but do you know that there are some places in the world today where you have to get along without just about everything else golly daddy i guess i kind of got carried away but i'll bet you one thing if we really think over what we have to be thankful for when we sit down to whatever mother fixes to eat tomorrow we'll be one family in america that will really have a thanksgiving dinner well that's how it got started the johnsons didn't have any turkey and the kids no i mean everybody likes to make something special out of a special day so we fell back on something as old as the pilgrims toting up the common ordinary blessings that we had to be thankful for that night i'd see dick there building his model airplane and susan just playing only they weren't just playing they were mulling things over thinking big thoughts for such young heads and as for mother and tom and baby janet and yes me too it was as if we had our eyes open for the first time seeing all the things there were to appreciate in just any ordinary day in america when thanksgiving day got here we took our places around the table and we were ready and then well we all knew it there are some things you just can't say but everybody in his own way knew what he had to be thankful for and that this was the time to think about it tom was first i am thankful for getting plenty to eat all the time with extras that count like cookies and milk after school like mom says i'm hungry all the time anyway and if i didn't live in a country where there is planes who go around golly and i'm thankful for the free public library where i can get books about adventure jack london richard halliburton gee the way they tell a story is as good as being there yourself and it's free with only a library card yes tommy thought about some of the things he ought to be glad for all the time and somehow turkey and trimmings seem to matter a whole lot less than he thought they did yesterday well then it was susan's turn susan's a happy-go-lucky kid you'd never credit her with thinking beyond her dolls but she got right into the spirit of it i am thankful we have what we need to wear the mother says it's hard to keep up with us we grow so fast i never thought before how many clothes it takes for all kinds of weather or how it would be to have to do without the right ones i'm glad to be able to go to sunday school or go to any church i want any sunday i'm thankful for my mother and daddy that they are here with us that both of them aren't too worried about things to take time to have fun with us i'm glad we're a family that families are still important in america i guess dick being the oldest was having some pretty serious thoughts i am thankful for being able to get an education for living more schools all schools open their doors to a guy who wants to learn where school books are studied instead of burned where a guy is rated by how much he knows and the community is rated by how well it teaches him i'm glad i've got a chance to play batting a ball around once in a while stuff like that i'm glad it's fun growing up in america sure baby janet's too young to understand the big word thanksgiving she's too little even to tell us the things that make her happy but we can tell and maybe she's thinking about them now maybe she's thinking about the fun of splashing around in the tub and about how good it feels to be clean about playtime with mother and the security she feels in mother's arms and as for mother seems she's always working cooking ironing tending children daylight to dark what does she have to be thankful for i am thankful that my children had the privilege of being born safely and of growing up healthy and strong i'm thankful that i have the privilege of guiding them useful men and women and i'm thankful for all the things our american system makes possible for the smiths and the browns and the johnsons for washing machines hot water out of a tap and a telephone to call the doctor when one of the family is sick a car to get dad to work yes i'm thankful for all the things free people working together can produce i'm thankful that when my neighbor drops in to borrow a cup of flour we've got the right to talk about anything we want to the parent teacher project the new mayor or or jane jones hat and last of all i'm truly thankful for the peace of mind that dad's job brings for knowing that even though there are lots of luxuries we can't afford there still will always be enough to go around for the things we have to have i'm glad dad doesn't work slave hours that there are evenings and sundays and vacations when we can all be together that's mother for you grateful for what america means to her family and now for me i've got so many things to be thankful for i'm thankful for this house it may need a coat of paint it has a mortgage but it's ours a place where we can be together in privacy and i'm thankful for the thing that makes this house our home the happiness here not just today or on christmas morning but on a day-to-day basis all through the year for knowing that a knock on our door means nothing to fear a friend calling or maybe a bill collector or a kid selling magazines you never know what to expect but you can count on one thing it's not going to be some political gangster coming to drag one of us off to jail because we believe in freedom and i'm glad that that freedom we've got let's me choose the kind of work i like and can do best taking a sluggish motor and making it hum again makes me feel that somebody got to his work or wherever he had to go just because of me and feeling like that gives me a lot of satisfaction and i'm thankful for newspaper just a few cents worth of printers inc and paper but more valuable than any amount of money because in it the editor's got the privilege of printing what he thinks and i've got the privilege of agreeing with him or not however the facts strike me and both of us the editor and i have the right to act on our opinions on election day to vote for the principles we believe in and finally i'm thankful for being able to believe in spite of everything that somehow someway the unity we've got here in the johnson family will someday spread to men and nations throughout the world all these people are men [Music] [Music] [Music] if there's one place in the world where it's fun to be part of the crowd it's at a parade maybe that's why everybody loves it for it i like to see the families having fun bringing back a lot of good memories it just makes me feel happy i guess it looks like everyone's enjoying what they're doing that's what it's really all about of course it wouldn't be a parade without a band to listen to or a hot dog to eat that's what a parade is hot dogs and music excitement and anticipation it's the fun of waiting for a band to come marching by seeing the talents and skills the discipline and pride that come together into one grand and thrilling impression called music [Music] on parade is a finished product created by many individual talents all working together to make the sounds we like to hear the tastes we enjoy the things we like to eat these two are a combination of special ingredients brought together by people of skill and talent let's go see why in music or in food these qualities of excellence lead to success [Music] the hot dogs we enjoy eating at a parade begin way out here in places such as this all over america meat processors like oscar meyer come to buy pork and beef fresh off the farm turning natural products into good tasting foods just like turning notes into music requires people who have special skills and talents and enjoy being the best at what they do all right stars and stripes forever starting at the grandiose portion here we go one two ready now the final product is important in all of our minds but we have a great time in rehearsing and there is a good rapport between director and members of the group yet the primary thing of course is that work now and play later and we all have a great time at it when i saw it i said this is a band that i want to be in and i never even dreamed that i was going to be in this band i had to wait four years to join the band so i was really happy it's just real fun it's nice because we work hard a lot of practice wicca ruins uh eric i want you to watch those dynamics there the accents are just just not there i'm waiting for them this time eric be with us here we go one two ready now our sound has to be the right way in tune and everything and we have to have all our notes it's the hardest thing to do to get as much facts as you can to be good at it the skills it takes to make a band a success are also the skills it takes to make good meat products pride experience teamwork the meat processors art has its own disciplines as rigid as those of the musician when i came in they had someone that was already trained on the machine that i run and i worked with him it's kind of complicated machine it's got a lot of buttons and switches i had a lot of experience with bacon we had be able to judge what was good and what was not good third trumpet what's going on over there mush all i hear is mush no intonation no dynamics what's going on let's get it together one two ready now teamwork is vital to the success of an organization such as a marching or concert band we have the various elements of the organization that must be working as a team to provide one unified mass performance there's a lot of individuals they're soloists but they all just mesh together and it's really a group effort that makes this past so great so we ought to sound good to make it sound the best the people are nice and you have to be to make to work we have a little saying obst our band sticks together everybody takes care of everybody else if like one person gets in trouble everybody helps them everybody just jumped right in took care of my family my dog and the cat it's a lot of friendship all the people in your section come over shake your hand and welcome you to the band everyone's friendly it's just a great plan to work for it's one unit the flag girls the group all the sections within the band management the staff members everything they push for this one band people who work together know the value of teamwork in the meat processors art individual talents work together to make the things we like to eat the boning of fresh meat is still done by skilled hands a tradition that goes back hundreds of years carefully trim sides of fresh pork are still cured and smoked in special rooms where time and temperature turn them into bacon scientific food processing techniques and specially trained people control the temperature moisture protein and overall quality of every item the modern processing plant makes from pork sausage to lunch and meats and it's all done under the eyes of federal inspectors here just as with the band individual skills and teamwork by all the performers are the measures of excellence [Music] we have quality assurance throughout the entire plant those quality checks are against certain high standards that our management and our sales department our marketing department for the most part have set [Music] they know and they have their thumb on the pulse of the consumer we know the quality levels that the consumer wants it's more fun to eat something when you know that what you're eating is good for you every slice of lunch and meat you pick up is a slice of good nutrition now a lot of people don't know this but a hot dog has as much protein as an egg and four ounces of ham has only about half as many calories as a quarter pound of hamburger so when you take quality luncheon meats and make yourself a sandwich you're making something that has the nutrition you need and the taste you like to make things that are good to read you need spices to give them distinction the spices we taste like the spices we hear have to blend together they must complement the other ingredients that are used the other instruments that are played and together they must create a harmony of taste or sound whether it's food or music how good something is depends a lot on how things come together in the case of a band the quality of excellence is knowing that all the parts each instrument each member knows what to do and when to do it [Music] move is made the way it should be the result is perfection [Music] and when hot dogs are made to perfection they're made in a special place called hot dog highway that makes thousands of them every hour because people like their hot dogs in all different sizes and shapes meat processors make regular ones long ones short ones plump ones skinny ones little ones and big ones [Music] and all along the line there's perfection at every turn [Music] research people are constantly improving processing and packaging techniques everything is checked individually and no package leaves the plant without someone's personal stamp of approval [Music] being the best making excellence a way of life means having pride pride in how you look and how well you do your job for a band it's wearing a uniform it's how the band looks and sounds when it takes to the field when i'm in the uniform i feel like i've got to set an example and i also have to show pride that i'm proud of this uniform that i'm wearing a band will be judged by its overall effect success depends on how well the band can execute the sounds and movements of its art the same kind of teamwork is found wherever pride and excellence are a way of life the package of food product wears is as important to its success as the uniform is to the band's success [Music] so [Music] do [Music] by the time we're out on the street we're so high as it is that uh we just can't be stopped [Music] so [Music] individual skills discipline pride teamwork these are the qualities of excellence the mark of success they are also the ingredients that make a band sound so exciting and a hot dog tastes so good [Music] my wow foreign foreign [Music] so [Music] [Music] so [Music] [Music] [Music] right in the middle of the holiday season i want to talk to you for just a few minutes about something that you can put in that christmas turkey that you may be thinking about fixing for the christmas season and of course we're talking about the christmas turkey stuffing that you would be using and we have an expert to talk with you this morning elaine lewis from pepfridge farm is standing by on the telephone to share with us some of the ideas about how we can stuff this christmas turkey so that it will have a little bit different flavor than it did for thanksgiving so we'll be talking to elaine lewis at pepperidge farm right now hello nancy it's nice to be able to talk with you today elaine so many of our viewers have asked how they might serve the traditional turkey so soon after thanksgiving and still make it taste a little bit different for christmas well you know even at the busiest time of year variety and stuffing can be achieved very easily for instance fill the large body cavity of the bird with the family's favorite stuffing and then fill the smaller neck opening with a second different stuffing you can easily add to your basic recipe and come up with a new and different taste treat apples and raisins are particularly good for this or cranberry and pecans or even dried apricots and toasted sesame seeds oh an excellent idea i wonder how many of our viewers have tried two stuffings in one turkey well nancy you know there's another way variety can be introduced into the holiday stuffing and that is by using different flavored stuffing to begin with now this could be a real chore if you were drying and cubing and seasoning the bread yourself but what a convenience it is to use packaged stuffings already prepared for you for example this pepperidge farm herb season stuffing contains fine particles of specially baked bread and a careful blend of seven aromatic herbs and spices and the cornbread stuffing is crumbled golden cornbread baked with subtle seasonings and the third favorite is cube stuffing which is small red cubes with baked in flakes of herbs and spices elaine what you suggest uh be added what would you suggest to be added to the basic stuffings for even greater variety oh there are so many possibilities cranberries orange sections nuts or oysters or even vegetables such as onion green pepper celery parsley or even corn or small pieces of ham or sausage can easily be added to make your very own colorful and flavorful creations well you've already given us more suggestions than we have holidays left i'm afraid do you ever prepare the stuffings without roasting it in the turkey yes indeed as a bake along you know a colorful tasty stuffing is an excellent substitute for potatoes noodles or rice it's sort of a side dish to complement the flavor of the meat and a bake along is any stuffing placed in a butter casserole covered and baked 30 minutes along with whatever is baking in the oven well so many of my viewers are stuffing their very first turkey this particular christmas will you give us some pointers on the actual stuffing of the bird yes be glad to after the turkey is rinsed in cold water and the neck and giblet removed it is patted dry both the neck and body cavities are sprinkled with salt now it's easier to stuff the neck cavity first stuffing about three quarters full then secure the skin with a skewer turn the turkey over and lightly stuff the body cavity three quarters full and secure that well i presume there is a guide for the amount of stuffings that you need for birds of different weights is that correct yes it is generally one can allow about one cup of stuffing per pound of bird if there is extra stuffing because body cavities vary with birds of the same weight remember that bake along idea and nancy never pack the stuffing in because it will expand during the roasting and could burst through and become soggy the large opening should be closed with skewers or laced with cord both wings should be skewered and when the turkey is done completely remove the stuffing to a hot serving dish what does one do with the leftover stuffing well if there is be sure that all the stuffing is removed from the turkey and none should be stored in the bird leftovers should be covered and stored in the refrigerator to be served again in one or two days to freeze place stuffing in freezer containers mark the date and use within one month and individual servings of turkey and stuffing may be wrapped and frozen together and should also be used within one month elaine tradition of roast turkey and all its trimmings this is the year of the handy turkey you know much easier to get out of the store and into the car and so forth part of the excitement of the holiday feast is watching the host carve his way through the turkey to help make this a success at your home house we're going to get some first-hand points today on how to car from culinary export miss martha logan she'll be talking to us on the phone direct from the kitchens of swifton company in chicago but first let's look at this short film on that will cover all the key points the turkey should be placed so that the breast will be to the carbon left with the tip of the knife cut the strip of skin holding the legs in place now press the drum stick outward with a fork or your left hand place the knife between the thigh and the body and slash through the skin to the joint keep that outward pressure constant while you're making this cut and the entire leg will separate from the body [Music] the upper thigh joint will come out so that you can cut it free with your knife that was easy wasn't it so is this next cut separating the thigh from the drumstick you make your first cut and the angle between the two just press the edge of your knife in until you feel the joint now for the breast take your fork put it firmly into the wing and press it away from the body with your knife make a long cut just above the wing joint cutting in all the way to the bone when that cut is made the breast is ready for carving start about halfway up the breast and slice straight down toward that cut above the wing joint when your knife reaches the cut the slices will fall free each succeeding slice of white meat is started higher on the breast until the crust of the bone is reached so there you are and it looks very simple doesn't it now let's talk to miss martha logan directly from the kitchens of swift and company in chicago and how are you martha i'm just fine thank you how are you well it's a pleasure to talk to you in chicago today how's the weather there oh it's kind of cold and we have a few snow flurries well um we don't have the snow flurries but it's a little chilly here now i want to ask a few questions martha all right is it good practice to start curve carving the turkey as soon as you take it out of the oven no it's best to let the turkey rest as we say for about 15 to 20 minutes martha do you think that the wine should always ask her husband to carve the turkey of course she should carving you know is a skill that's very easily acquired of course a sharp knife and a long tying fork will help and it also helps if the hostess puts the turkey on a large enough platter that gives the host a little room to work in i see now my wife always asked me to do the carving but i generally butchered up quite well but we giant managed to eat it just the same so now let's have these first pictures that uh you're going to describe the first one is on the screen now all right this one shows the first step in carving a turkey and that's removing the drumstick you place the knife between the thigh and the body of the turkey and cut through the skin right down to the joint now separate the leg from the body by pressing that leg outward with the knife during cutting and by bending the leg back away from the body with the fork or with your left hand now the next picture shows the trick to slicing the white meat on the breast of the bird insert the fork firmly into the upper wing and press the wing away from the body and with the knife make a long cut just above the wing joint right through to the body frame and in this next next picture you make the first slice you begin halfway up the breast and slice downward with straight even strokes and when the knife reaches the cut that you made above the wing bone the slice of white meat will fall free and now this last picture shows how you continue to slice the white meat you begin the next cut at a higher point each time and continue to slice the breast meat until you reach the crust of the bone and that's how easy it is to carve a turkey in just four simple steps martha i know it sounds very simple and i don't have too much trouble with the breast but how about slicing the dark meat on the leg well that's a simple matter too you can just uh disjoint the thigh from the drumstick and then slice the dark meat right on a separate plate of course now i have a couple of basic questions martha and the first one is how do you know what size turkey to buy for your family well there's a very simple guide to follow and that is to allow one and a half pounds of the ready-to-stuffed turkey and one and a half to two pounds of the already stuffed turkey per person then if you have a family of four you'd only need about a 10 pound bird do you have to account for the drift or the loss from bone oh there's a small loss not too much and uh this guide that i gave you the one and a half pounds uh of the ready to stop turkey per person that allows for plenty of nibbles and good second day dishes well that's one of my problems martha that there's just two of us and if i buy a 10 or 12 pound word i may have turkey for a week oh well uh it's a good idea if you have a freezer to freeze the leftovers and then uh wait for a week or two before you have some of those delicious second day dishes now one other thing martha how do you know when the turkey is done just right well there are two tests that you can make one is uh the pinch test as we call it you cover your fingers with a paper towel and pinch the thickest portion of the drumstick and the turkey is done if that meat feels very soft now the other test is with the meat thermometer which you insert into the thigh muscle next to the body cavity this is the portion of the turkey that's last to cook done and the temperature should read about 185 degrees for the turkey to be taken from the oven well martha you've been very
