so so so hi everybody i'm skip alzheimer and welcome to the av geeks lunchtime streaming show where we watch old 16 millimeter films about our past etc uh that last film was a silent film that ultimately came from the mogul brothers uh collection which was a library uh place that you could rent films from and i don't know where the original source material came from but um yeah it's kind of interesting to see uh engineering circa 20s 30s probably um pretty great stuff there um all right so we have this film where i have multiple copies of it and i think it's a title that's so generic that it could be that it's made by different companies film companies and this one is from our good old friends at the moody institute of science who uh was a kind of uh educational film company uh of the moody bible institute uh and it was spearheaded by dr erwin moon and it has this beautiful photography this one's faded a little bit uh red but um beautiful photography he was a hobbyist photographer and a hobbyist a hobbyist scientist uh and we'll see where the um god hook is because they always tend to put something in there about uh god or the great creator uh so here's plant life at work enjoy however we can witness this wonderful event in the life of a plant by using time-lapse photography within this field of poppies a great variety of tasks are being accomplished by the plants at work energy is being used for movement growth the manufacture of food and even reproduction let's use the time lapse camera to compress four full days and nights in the life of a single poppy plant into less than half a minute on the screen [Music] on the morning of the first day the poppies pop open and late in the afternoon they close the next morning they open again and at night they close the third morning they open and at night they close then the fourth morning they struggle open wither and die there's a lot of force involved in the growing of living things the struggle of this bird of paradise to open is an example of the same kind of force that enables growing roots to lift a sidewalk or crack the foundations of a house [Music] the ruffle blossom of the azalea opens slowly and carefully revealing exquisite beauty fashioned and tinted by the master artist [Music] we might think it's the wind blowing the leaves of the daffodil back and forth but these pictures were taken in the laboratory and there's no wind there the leaves you see grow first on one side then on the other giving them this swaying motion but of course it takes the time-lapse camera to record it it's much too slow for the eye alone to catch sometimes it takes a camellia bud months to open but here you see it bloom in just 18 seconds time compressed 50 000 times each flower has its own special tempo of growth the begonia is so active it's almost impossible to keep the camera focused upon it [Music] the fuchsia is a favorite with gardeners everywhere but how many of them realize that it grows like it had a bad case of hiccups the star-like blossoms of the christmas cactus have a beauty that's characteristic of the whole cactus family plants don't grow all the time they grow a while then they rest in this rose for example there's a period of growth then a period of rest then a period of growth and a period of rest flowers are as different as human beings the hibiscus seems to have quite a sense of the dramatic as it unfurls with a grand gesture in a riot of color but plants are working at something far more vital than beauty green plants produce directly or indirectly every bit of food we eat remember the first time you decided to raise food for your family you planted the seeds and covered them so carefully and you rather expected the plants to pop up out of the ground like this but somehow it didn't quite work out that way you got to wondering well maybe i planted those seeds upside down is there a right and a wrong end to a seed on opening of bean seed we find the embryonic root points in a definite direction this determines the direction of initial growth so it is possible to plant a seed upside down but the root always grows toward the pull of gravity and away from the sunlight this growth in response to a stimulus is called a tropism even if we try to pool the growing seed it doesn't get mixed up the root reverses its direction and continues to grow downward in its downward growth the root is attracted toward moisture if it encounters a dry region like the red area it limits its growth to the area of moisture the tap roots develop first and push rapidly downward in search of water then the secondary or branch begin to develop producing a typical taproot system [Music] we've watched the roots underground now let's plant another seed and watch the plant at work above the ground [Music] within a few days the stem of the new bean plant forces its way through the hard-packed ground and struggles upward the bean is used for this experiment because it's one of the plants that brings the cotyledons or food storing parts of the seed up above the ground the plant must depend upon this stored up food until such time as the leaves develop and reach the sunlight the plant will then be manufacturing its own food with the time lapse camera we can actually see the cotyledons shrivel and die as they give up the last of their food to the bean plant as the plant develops its tip circles about seeking support for its upward climb place a stick nearby and the plant exhibits another tropism an uncanny instinct for direction and soon coils itself about the stick the purpose of this struggle is to place the leaves in the sunlight but if light can't be found by growing upward the chute will grow in any direction to reach it even if it has to detour through a small hole to get there [Music] plant two seeds at the same time grow one in the light and the other in the dark the one in the light soon has well-developed leaves but the one in the dark has wasted no energy in developing leaves which would be useless in the dark it has expended all its energy in a frantic effort to reach the light so that the process of food production can carry on within its leaves these marvelous food factories are the source of energy for all the life functions of the plant within the cells of green leaves the energy of sunlight is captured through the process of photosynthesis but let's look down inside the minute cells of the leaf and see this factory actually in operation the dark green chlorophyll grains or chloroplasts move endlessly round and round inside the cells in some mysterious way through the action of the sunlight this photosynthetic process takes carbon and oxygen from the carbon dioxide of the air and the hydrogen from the water of the ground combining them into carbohydrates and other food elements part of this food is used by the plant as energy for the constant activity of being alive [Music] some of the food is stored in the sea when the seed is planted under favorable conditions the fabulous energy of life is released and another generation of bean plant shoots upward away from the gravity of the earth and toward the sunlight above this is the principle that causes a tree to defy the law of gravity and reach high into the air the mysterious life forces that work in a single redwood giant are almost beyond our comprehension this tree is probably the oldest living thing on earth it was two thousand years old when christ was born for three thousand eight hundred years this tree has been lifting tons of water each day to its top it is evident that there is an infinite power behind the mystery of life and man must stand in reverent all as he sees the wisdom of the creator's provision for plant life at work [Music] it was it doesn't disappoint i mean they're they're amazingly consistent and i have to say that um some of the most beautiful science photography uh both time lapse uh micro photography um pixelation uh slow motion was shot by the moody institute of science like they really put time and energy into uh what they they did and so it's it's stunningly beautiful stuff and then they kind of go with the science of the time they and um dr erwin moon did kind of find scientists that he befriended who talked about different aspects of science um but you know it's interesting it kind of goes to a point they talk about the wonders of of these uh plants the wonders of this tree that's so large and so old and then it's like but then we just don't know what what's beyond that you know not realizing that science is working towards that that like they sure they didn't know it when they made this film in the 50s but yeah they began to figure it out they they did work to figure it out um and um so they default to a magical inventor creator uh god so that's your moody institute of science uh and that one kind of went on the right under the radar because that title is a cornet film and i think it's an encyclopedia britannica title as well so the reason why this film was distributed to schools was because of the national defense education act which um essentially when sputnik launched the united states is like whoa russia's or soviet union is doing a great job here um with their technology we need to catch up so let's put throw a bunch of money into schools and that went towards uh science and math and uh so there was this big market for educational films about science and math and the moody institute of science were like hey we shot all this footage for these big 30 minute or hour long presentations that we did so we can use some of that footage and edit them down to shorter things and sell it to the educational market and at the time those bigger things were new testament oriented so they were what we call sermons from science what they called sermons from science where so that show this magical stuff mystery stuff and then there would be like a short little sermon i'm talking about scripture talking about jesus blah blah blah when they did the smaller ones they pulled back and they said well we'll talk about god but we won't talk about jesus although this one did talk about jesus um but didn't read scripture from the new testament because they figured that well there's three major religious groups united states um protestants of which we are catholics and the jews and so we're like if you talk about god you're hitting all three marks maybe muslim you know whatever uh so they were like yeah we can safely talk about this because that is the status quo um and so anyways there's a little bit of history for you about moody institute of science uh fascinating stuff uh let's go to the zoo is this the right film yeah here we are at the zoo with so many animals to see it's hard to know just where to begin [Music] now let's see suppose we start in right here with the polar bears what a splash that cool water probably feels good to the polar bear for he comes from the far cold north here you are mr polar bear here's something for you some sugar-coated popcorn look at him standing up oh look who's here would you like some too i guess you'll have to duck into the water after yours but you're used to it in your home way up north you spent a lot of time in ice cold water well polar bears we have to leave you now here are more bears these bears are from alaska they're called kodiak bears they're the biggest bears in the zoo in fact this is the biggest kind of bear in the world this fellow weighs as much as eight men he has learned to beg for something to eat this seems to be feeding time with the visitors doing the feeding of course the animals get regular meals too [Music] but watching the big bear eat is more fun when you give him the food yourself look at his paws with their long sharp claws he could use those paws and claws to get food for himself if he had to well it seems to be eating time for the visitors too popcorn lollipops ice cream there's plenty to eat at the zoo now let's take a look at the lions here are four of them the keeper has food for the lions big chunks of raw red meat [Music] just look at them quarreling over that first bite a lion is a big kind of cat lions were born in the zoo but their parents came from africa lions are great hunters like all the other animals of the cat family when they're around other animals do their best to keep out of the way no wonder the lion is called the king of all the beasts and now raw meat for another animal the tiger this tiger came from asia he smells the raw meat ah good catch now he's watching every move the keeper makes there look at him go after and now what next well this sign points to the kangaroos let's go see them there goes one of the kangaroos now kangaroos come from australia these two kangaroos are finding a good meal of fresh grass with grass all around the kangaroos can eat whenever they feel like it a mother kangaroo has a pouch where her baby lives until he's three months old this baby kangaroo is old enough to come out when he feels like it here's another baby a baby alpaca just one day old his parents come from the mountains of south america someday the baby will have a long shaggy coat just like his parents now let's see the giraffes my he's tall his long legs and long neck help him to reach high over the fence and nibble leaves from the trees the giraffe's real home is on the plains of africa the barn for the giraffe has to be very tall this one has just come outside let's see what he's going to do a little sample of greens and then with a hop and a jump he's off for a gallop around the yard this giraffe is feeling very frisky today even though he lives in a zoo he has plenty of room to run and play zebras and what beautiful striped coats they have you know zebras are cousins to horses they run in big wild herds in africa where their real home is no what next ah monkey island baboons from the jungles of west africa this must be a baboon family see the baby nearly all kinds of monkeys like fruit especially bananas is this a fight or just a game of jungle tag now let's see what's going on at the sea lion pool the keeper has just come with a bucket of fresh fish you know fish are the sea lion's favorite food [Music] look here comes a big boy he was brought to the zoo from the coast of california [Music] this fellow is hungry too he knows what's in the bucket tail head and all at one big bite look at this the keeper is called a hippo out of the water just so we can see here what tiny ears she knows who her friends are this other hippo is a little afraid of people sometimes roots and sticks get caught in a hippo's mouth and this one's glad to have the keeper pull them out for her here comes a mother hippo and here comes her baby wither just two months old this is the first time today they've come out of the water they like water their real homes are the rivers and lakes of africa it's getting late but there are one or two other animals we'd like to see before we go the rhinoceros is one of them for short we call them rhinos some people think they're the ugliest animals at the zoo these are hooked lip rhinos from africa my what thick skin but even with their thick skin they'd hurt each other fighting if the keeper didn't cut the points off their horns did you know that the rhino and the hippo belong to the same animal family as the elephant a family of thick skinned animals the elephant though is the only one that has a trunk the elephant's trunk is really his long nose well we saved the biggest animal to the last and now it's time to go someday soon we'll come back for another visit to the zoo a good friend james brill james bro the narrator uh many early encyclopedia britannica films and erp films erp is kind of where he got his start and then um uh in such the britannica bot herpes collection and james bro came along for the ride all right what do we got so behind me yeah so like the the way the webcam is displayed in the software i'm using it's it throws me off it's not like a mirror so i have to do reverse um anyways uh we've seen films about milk well this is a new story about of milk so enjoy years i done my best i cover the people play things that mean the most to us in our daily lives and the story i'm going to report to you right now touches influence on our lives as any event taking place in the world today this is an important story as important as life itself it's needed telling for a long time [Music] that milk is essential to life as a golden thread of truth running through the entire stream of civilization indeed the story of cattle and of milk is an integral part of the story of man matter of fact in the very first chapter of the bible in in genesis i quote and god said let the earth bring forth the living creatures after his kind cattle and creeping thing and beast of the earth after his kind and it was so and god made the beast of the earth after his kind and the cattle after their kind and everything that creepeth upon the earth after his kind and god saw it was good american pioneers who opened the west felt that it was good also sort of walking chuck wagons carrying nutrition for a growing nation today we find ever-increasing evidence of the indispensability of dairy products throughout the world how the american dairy industry has geared itself to meet the urgent demands of 20th century type of living is the new story of milk not long ago well when i was a kid the story of milk wasn't a very new story the farm boys day began before sun up [Music] [Music] for the older folks the day had already gotten a good start those country-style pancakes haven't changed neither has a young boy's appetite the boy's father out in the barnyard getting ready for the morning milk [Music] not very efficient but that's how it was done back then of course actually getting the milk was only a first step there were still a few things to be done before it could be sold for one thing the milk was strained for another it was cool [Music] and then the day on the farm really began the animals needed to be fed there was much ground to be plowed [Music] the hay had to be wrecked the work was done with the only power they had old-fashioned muscle power the days were long on yesterday's farm but there were compensations the race to be first at the old swimming hole or just sitting in the sun contemplating the wonder of it all but back to my story the milk is well cool by now and it's time to load up and head for town [Music] of course it took a while to get there but nobody really find it then and that's how it was on the dairy farm years ago i don't have to tell you folks that conditions on the farms certainly have changed through the years country style pancakes and appetites may be the same but the stove is new we have gas and electricity now and we have diesel power and a lot of other new things but what about the milk industry what's happened here after all a cow is a cow and always has been this is a cow of today but this is a replica of a picture drawn of a cow in the year 1000 to most of us things are basically the same same confirmation more or less the cow today and the cow then but to the knowing eye there's a marked improvement in the dairy cow of today this copy of a picture drawn some 3000 years ago tells us something else it proves conclusively that man and his herd have been closely associated almost since the dawn of history with the cow serving as a beast of burden and as a good provider of food and clothing here's an example of an early form of egyptian writing a sort of picture magazine of that day one of our two pictographs paying tribute to the dairy cow is the foster mother of the human race supplier of beef source of butter the original cause of cheese all which goes to prove that milk nature's most nearly perfect food has been with us for a very long time what then is the new story of milk well for one thing modern daring has become perhaps the greatest single industry in the world today in the united states alone enough milk is produced to form a river every year three thousand miles long forty feet wide three feet deep a far cry from the wagon loads the dairy farmer used to drive to market every morning but you know volume alone isn't all that's new in the story of milk [Music] [Applause] [Music] this is a modern dairy farm yet in many ways it looks a lot like its older cousin the dreamy slow-moving hand-operated farm of yesteryear now as then there are the picturesque fields the green pastures the clear ponds and the gentle brooks the comfortable barn the familiar silo the farmhouse and of course all bossie herself still chewing contentedly on her cut but here the comparison with the past ends for your dairy has kept pace with the times and mechanized almost all of its operations [Music] not so many years ago farming was considered merely a skill today it's a complicated highly specialized science today your dairyman works constantly to improve his soil and his crops to provide his herd with newer and better [Music] in order to draw from his land the richest most nutritious crop he utilizes all the knowledge of modern chemistry replenishing and reconditioning the soil according to the latest most scientific methods for the modern farmer has learned that the quality and amount of food received will have a marked effect on the health of the cow and the quality of the milk she gives modern research has also taught him that the animal's surroundings and general state of well-being play an important part in the production of high-quality milk so today he houses and cares for his animals in the most efficient and scientifically designed buildings roomy well lighted often mechanically ventilated to ensure fresh air and from one end to the other meticulously clean a far cry from the dark cramped quarters which housed the dairy herd of a bygone farm [Music] the cow's dinner too bears little resemblance to the old days now the herd's diet is carefully and scientifically balanced to include every essential food element necessary for the high production of quality rich milk now a modern farmer keeps an accurate record of each feeding along with the animal's current milk production later he co-relates and studies this information to determine the best possible combination of feeds for each individual animal cows are still milk twice each day morning and evening but that's about all that's left over from the old way an expert milker quickly washes and disinfects the udder [Applause] [Music] then the rubber suction cups are the completely automatic milking machine untouched the milk flows along a network of spotless piping to modern refrigerated storage tanks another 20th century concept is the modern scientific milking power [Music] [Applause] [Music] again rigid hygienic conditions as the milk flows to the receptacle which accurately record the animal's individual production then the milk is sent to the pipeline in the ultra modern version of the old milk house the fresh warm milk is automatically strained and immediately cooled to the proper temperature while awaiting transportation to the city processing plant or country receiving station well that's part one of the new story of milk quite a change from the way it's used to be done down on the farm isn't it part two of this remarkable story concerns the finely tuned intricately timed processing and distribution system which moves nature's most nearly perfect product from the farm to you that story begins right where we left off at the refrigerated holding tanks in the milk house for at the beginning of each day the race is on to bring fresh milk to you in the shortest possible time today the refrigerated holding tanks are quickly emptied by pumping the milk through sterilized plastic-lined hoses into huge insulated tank trucks for bulk delivery then the vital cargo is on its way to the heart of your community to arrive at your modern processing and packaging plant virtually as fresh and wholesome as the moment it was taken from the obliging cow following each day's processing pipes valves and fittings in the plant which have come in contact with the floor milk are removed thoroughly cleaned and sterilized much of the equipment is cleaned right in place by pumping a hot solution through the pipes the results sparklingly clean thoroughly sterilized equipment another vital paragraph in the new story of milk and still the parade of progress continues this time under the watchful eyes of the inspector of weights and measures and your local health officer their job is to check on quality and quantity they do this by inspecting every step of the dairy operation here is double protection for your benefit all along the line from processing to packaging but before the newly arrived shipment is accepted for processing test samples are taken from the tank truck directly to the plant laboratory here they are given a variety of checks and tests to assure top quality only after the laboratory says okay is the raw fresh milk brought into the plant ready for the trip to the highly specialized and complicated processing equipment [Music] after entering the plant the white liquid travels through the pipes to the first stage of processing the centrifugal clarifier the clarifier is the modern scientific equivalent of the simple old-fashioned straining process of grandfather's day the trip along the pipeline continues to the pasteurization process in which the milk is passed in a continuous flow through a series of stainless steel plates heated to 161 degrees for a total of only 15 seconds this rapid heating assures absolute purity without changing or affecting the flavor of the milk the milk moves on to the next processing operation homogenization with pressures up to three thousand pounds next the milk is forced out at high velocity through a nozzle-like opening the past globules are broken up and distributed evenly throughout the liquid after homogenization the milk is rapidly cooled to its best storage temperature and temporarily held in large tanks ready to be packaged and distributed to you unlike the cow what you put the milk into is kept right on changing with the times and one of the single most important developments in the new story of milk is the package itself let me show you what i mean believe it or not this actually was a milk bottle not very handy for home delivery but a bottle nevertheless and when this football type of container went out of style it was replaced with this handy little item the open-air bucket smile all you like but remember it was the best they could think of in those days now of course everybody knows that milk is too precious to carry around in an open bucket like this and way back then they knew it also so they decided to put a lid on it that's how progress works but even a lid couldn't make this bucket a good container for milk and after a while they had to invent something else and this was it how do you get milk out of it why it's easy the old dipper system dip around in here a while sooner or later you might come up with something and even pour it correctly it was very easy to put back in actually very solemn loss of dipper very solid but that too left something to be desired what was needed was an honest-to-goodness convenient take-home package being a nation of tinkerers we soon came up with the answer the lester jar except for the fact that it weighed four times as much as the milk took about two minutes to open spilled most of the contents before you got it open and actually cost much more twice more than the milk itself it was the perfect container and so progress had to keep on progressing the covered glass bottle came into our lives for about 1890 and in one form or another it's been with us ever since but the modern dairy industry in its never-ending search for the perfect container knew there were still improvements to be made a package was needed that could really live up to the newness of the dairy farm and the processing plant something that would protect all the careful and scientific handling which the milk undergoes today a container that would be light safe strong and convenient for everyone convenient sanitary safe easy as a pitcher to use and to top all these advantages the disposable carton is the most sanitary milk container ever invented and only by you the paper itself from which the cartons are made has a long history of purity in one sense the paper carton isn't made at all it's grown that's right growing vast forest reserves are cultivated exclusively for the making of paper for food containers these forests are given special attention and extraordinary care to ensure a never-ending supply that is pure and will meet the exacting requirements of a sanitary food container from the very beginning the manufacturing of paper is kept under strict sanitary control the logs are debarked and washed in pure filtered water before being cut up ground and cooked under laboratory control into pulp from which the milk container board is manufactured the pure fiber board made from virgin timber is then converted to the intricately shaped blanks from which the milk carton is formed right in the milk processing plant just seconds before being filled with your milk after these paper blanks are loaded into the completely automatic forming and filling machine they are not touched until they emerged filled sealed and ready for delivery to you a prime example of one of the many ways in which the dairy industry of today has completely modernized its operations for this ingenious machine not only forms the containers sterilizes them and moves them along to be filled with milk sealed stapled and coated but it does all this without once allowing the containers to be touched by human hands from the standpoint of the added convenience to dairymen grocers and consumers from the standpoint of health alone the disposable paper container has no eating so you see part of the new story of milk is the story of a new partnership and in this ingenious machine the partnership becomes one for at the moment the pure paper blanks become cartons ready for food and at the exact moment the milk is just right for packaging they merge within this machine into a single unit food and package ready immediately to be distributed to you quite a difference from the old time method isn't it but now the new story of milk gets even bigger leaving the dairy the milk is dispatched without delay to a tremendous network of outlets for the prompt efficient delivery of fresh wholesome milk to you is the daily accomplishment of your modern dairy to modern food stores where the milk is displayed in attractive easy to get out refrigerants to restaurants large and small where milk is being served more and more as the perfect meal time beverage [Music] to schools which provide that noontime energy for our growing youngsters to factories and office buildings at work or at play delicious energy providing milk is being made available everywhere even at night long after most stores are closed convenient outdoor milk vending machines stand ready to serve for today's science skill and know-how of the modern dairy farmer plus the latest machines and the newest methods of dairy processing plants all combined to bring you the freshest most nutritious milk possible milk which only a few hours ago was freshly produced on the farm fresh wholesome good tasting milk the best to be had anywhere in the world today thanks to today's scientific production and modern packaging yesterday it was hand milking in a dingy barn through progress it's done today automatically with efficient sanitary milking machines once the milk was crudely handled and primitively cooled now all processing is automatic and correct temperatures are maintained by the most modern refrigeration equipment yesterday's old-fashioned muscle power has been replaced by almost complete mechanization from farm to delivery the day of the horse-drawn cart with its leisurely pace has disappeared to be replaced by the most modern bulk pickup and home delivery trucks bringing the freshest possible milk to you in a matter of hours [Music] in a convenient easy to pour container [Music] modern dairy methods and techniques are bringing fresh milk in these cartons to populated areas throughout the entire world for the new story of milk is actually a world where improvements are in ideas of pasteurization and homogenization the milk carton has made a lasting contribution to the new story of milk something a milkman can be really proud of something the world waited for for a long time you know as a reporter i've seen the hunger and malnutrition in the world's underdeveloped countries and i've noticed that where milk is plentiful people seem stronger and healthier and i've come to it it's awfully dairy industry is directing all its efforts toward keeping this milk ever new [Music] it's it's such a fascinating film uh unfortunately you know the beginning in the end we're super splicy and so what happens of course is that [Music] film gets damaged when it is uh not threaded correctly so at the beginning of the film it could get shredded and fall apart and and also if somebody tries to run the film back through the projector to rewind it that's also where it gets so that's why you see it damaged at the beginning and at the end um you know we have a lot of films about milk uh and most of them are by the the national dairy council but this one was by the people that make milk cartons and uh it's so fascinating and i think what's interesting is we have quite a few films and almost all of them came from buffalo public schools which are all about the containers like uh you know like hands uh and so there's a film that you think it's about coffee but it's really about coffee in cans um and you know i mean that's part of the deal is like how do you get this product from point a to point b in a hygienic convenient way uh i have another film that i got i think on ebay which was it's all about paraffinated ice cream containers so it's boxes cardboard boxes that are coated in wax and then ice cream are in them and so it's a whole thing about that um so it's all about it's this one's about milk but it's really about the containers of milk and how it's contained and then his thing about well anywhere i've ever gone where milk is free-flowing uh you know people are healthy and safe and it's like well because there's an infrastructure to support milk being sold and distributed um safely then yes the chances are they've already reached this threshold where they're um you know already have a lot of the stuff figured out as far as hygiene and health and nutrition anyways fascinating stuff i love watching a film like that because it's really it's like who made this film and why did they make it and like oh i get it it's really about the milk cart and not milk itself but we think about how milk is being distributed now uh in jugs um also i guess in canada in bags which is just fascinating to me like they went down a different path um and how did they go down that path is there a film a
