e e e e e e for [Music] nature offers lakes and ponds for recreation thanks to Modern skills the joys of water also become available to the city dweller the experience of a changing family environment is being shared by a little girl Renee and her dog Pochi [Music] one summer day our beautiful o tree our pride and joy was being cut down in fact our whole backyard was torn [Music] apart this had been poochie's favorite place to relax how could we do this to her [Music] all of the shrubs and the branches of our tree were hauled [Music] away a bulldozzer carried off the torn up walkway [Music] then the ground was excavated a deep hole took on the size and shape of a swimming [Music] pool the next morning a steel frame was built to give the pool a strong Foundation poochi who usually welcomes visitors was not in the mood to appreciate the many workmen doing very strange things the heater and filter were set up to operate by electric motors a plumber brazed copper pipes which would Supply water to the pool electricians and plumbers wired and connected the new Machinery actually it was all very interesting to watch but the most dramatic part of the construction was the gun hiding the whole steel frame was gradually covered with a concrete mix applied Under Pressure through a nozzle [Music] the edges were carefully cut curving shapes appeared yes now we could visualize a pool even though it was just an ugly good for nothing hole to poochie [Music] then a trench was dug around our property line and Bricks were being prepared for our new wall [Music] concrete was poured into the trench to Anchor the wall securely To The Ground by now poochie had decided to supervise whatever was going [Music] on the first row of brick was laid with caution so that the wall would go up straight and accurately [Music] The Brick Layers took pride in their work and we could see that it was going to be a sturdy good-looking [Music] wall for 10 days even after the wall was finished we sprinkled the concrete to prevent it from drying too rapidly on the 11th day the pool received a Decorative Touch handsome coping gave it a practical non-slippery [Music] Edge the toall ler did such an expert job that even our little boss was satisfied once again the cement mixer truck drove up our back [Music] street concrete was carried in poured and then traveled smooth [Music] [Music] since our backyard is small we decided to have a decking all around to keep the pool clean [Music] next the carpenter added his skills to our remodeled [Music] backyard even poochie indicated her surprise the Redwood gate was built by a master Craftsman he cared for his work so much that he even signed the gate much as an artist signs a painting and then one day even before the sun was up another crew of workmen [Music] came the plaster was being mixed while pooie supervised [Music] the wide plaster smoothly and evenly applied finished off our pool we were quite excited by now and not too long afterward mom and I were the first to enjoy a swim then inspired by good workmanship sh we kids decided to do our share I varnished the gate really well my big brother proved his skill as a [Music] carpenter he built a cover for the [Music] equipment my younger brother painted the small part of the old wall still standing [Music] and I enliven the old flower pots with gay [Music] colors we all had fun selecting and planting flowers and Greenery arranging all sorts of wooden and Clay planters only poochie got bored with all the [Music] fuss mom put the finishing touches of paint onto the old wall even my brothers became interested in [Music] gardening and poochie now she understands why the big hole was dug in her her [Music] backyard when she isn't busy watching me paint her plant she loves to relax after all that hard [Music] work all right can you hear me now um I'm not sure what happened uh I know what's happening with me um after I did the show yesterday I was like wow I feel like crap and basically took a 2hour nap and um so I've been feeling kind of low energy-wise and then I realized like oh yeah I had covid last week and I probably still am suffering from it even though I'm testing negative so anyways we're doing this from my bed where I have this nice cushion behind me and I don't know why the mic went bad on this OBS uh could be another app I'm running in the background is taking that control of that mic who knows anyways so that last film was made by the alond family uh they made a series of films it's interesting uh so Jeff Alexander who does academic film Archive of North America he's based in San Jose California he's a good friend anyways he has a bunch of these almond films that he got from the family and uh this one is basically they just shot like amateur footage of their backyard getting a pool and then they edited around it and made it into some short I don't know if this is ever distributed Beyond like The Limited range that they distributed but it's pretty great that music was awesome awesome was original music um so yesterday Nathan said I love that uh our art class makes a film and I have another one this is uh kids making a animated version of nightmare or I'm sorry of Night Before Christmas not Nightmare Before Christmas enjoy e [Music] n [Music] [Applause] [Music] n [Music] everybody knows the poem was the night before Christmas but maybe you don't know that the real name of the PO poem is a visit from St Nicholas it was written by a professor who taught Greek literature his name was Clement Moore and he wrote the poem to amuse his own children more than 100 years ago it spread by word of mouth and finally Professor Moore agreed to have it printed in a newspaper all the other important books which Professor Moore wrote have been forgotten but a visit from St Nicholas lives on and belongs to [Music] everyone TW the Night Before Christmas when all through the house not a creature was stirring not even a mouse the stockings were hung by the chimney with care in hopes that St Nicholas soon would be there the children were nestled all snug in their beds while visions of sugar plums danced in their [Music] heads and Mama in her cief and I in my cap had just settled our brains for a long winter's nap when out on the lawn there arose such a clatter I sprang from my bed to see what was the matter away to the window I flew like a flash tore open the shutters and threw up the sash [Music] the moon on the breast of the new fallen snow gave a luster of midday to objects below when what to my wondering eyes should appear but a miniature sleigh and eight tiny reindeer with a little old driver so Lively and quick I knew in a moment it must be St Nick more rapid than Eagles his corsers they came and he whistled and shouted and called them by name no Dasher no dancer no Prancer and Vixen on comet on Cupid on D and Blitzen to the top of the porch to the top of the wall now dash away Dash away Dash away all as dry leaves that before the wild hurricane fly when they meet with an obstacle mount to the sky so up to the Housetop the corsers they flew with the sleigh full of toys and St Nicholas too and then in a twinkling I heard on the roof the Prancing and pawing of each little hoof as I drew in my head and was turning around down the chimney St Nicholas came with a bound he was dressed all in fur from his head to his foot and his clothes were all tarnished with ashes and soot a bundle of toys he had flung on his back and he looked like a peddler just opening his pack his eyes how they twinkled his dimples how merry his cheeks were like roses his nose like a cherry his droll little mouth was drawn up like a bow and the beard on his chin was as white as the snow the stump of a pipe he held tight in his teeth and the smoke it encircled his head like a wreath he had a broad face and a little round belly That Shook when he laughed like a bowl full of jelly he was chubby and plump a right Jolly Old elf and I laughed when I saw him in spite of myself a wink of his eye and a Twist of his head soon gave me to know I had nothing to dread he spoke not a word but went straight to his work and filled all the stockings [Music] then turned with a jerk laying his finger aside of his nose and giving a nod up the chimney he rose he sprang to his slay to his team gave a whistle and away they all flew like the down of a fistle but I heard him exclaim a he drove out of sight happy Christmas to all and to all a good night n [Music] so Marvin Miller uh that narrator uh should sound familiar to you uh and Salinger uh films should sound familiar uh in case you forget here's uh one of the whole series of films that he narrated enjoy you are looking at one of the nerve centers of any good eating establishment the dishwashing area if you Mr dish machine operator don't do your job correctly the result is unhappy people lots of [Music] them the Bell stop ringing and soon there are no people at all if the dishes you handle are not washed at top speed if they come out dirty or unsanitary you your management and everyone you work with are in trouble that's why your job proper dish handling and dish machine operation is important to any successful eating establishment [Music] cleanliness is the keynote of the Food Service Industries and cleanliness must begin with employees since dish machine operators come into contact with utensils and dishes on which food is served they must be neat and clean while on the job being friendly with bus boys and other dish machine operators makes your job easier and more pleasant remember the team workk and cooperation with others are essential in the Food Service Industries your first step in washing dishes is to remove the excess food bits and particles you can do this with your bare hands or wear rubber gloves or use a squeegee find out which method your management prefers then pre-rinse under a warm spray this helps to ensure the wash cycle doing a complete job now let's see how the dishes are loaded on a large conveyor type machine place each dish carefully and properly in the conveyor be sure that two dishes are never stacked in one space this gives the wash and rinse sprays the best chance of doing a thorough jar Place cups Rim down stack glasses upside down put silverware into a shallow perforated tray then pre-rinse to soften remaining food particles lastly place the tray on the con cups or glasses in racks can also be placed on the conveyor now let's look at a smaller type of dish machine a type that is used in many establishments here after plates or other dish wear have been cleaned of excess food particles they are placed in Dish racks they are pre-rinsed both front and back make sure that plates are properly separated also in loading handle all dishes and glassw carefully to avoid breakage that's right arrange them correctly for the best washing action for this type of machine put silver handles down in the special containers which are placed in the dish racks then pre-rinse silverware to prepare it for the most effective washing to better understand how the dish machine works let's look inside as your dishes move into the machine sprays are activated from top to bottom first for washing then for rinsing and sanitizing for these sprays to do their job you must load the machine correctly learn about the detergents require ired by your equipment then be sure you maintain proper operating temperatures usually 140 to 160° in the wash cycle 180° or more in the rinse cycle if your management uses a wetting agent learn how to add it correctly by asking someone who knows as items come out after washing they will quickly dry in the air with this type machine you place items in racks or bins as they come out on the conveyor a covering such as paper or cloth will keep your dishes sanitary for a longer period of time place silverware in separate containers and store away from traffic and moisture also Place cups in racks again don't touch the edge of the cup Place glasses in racks handle them as far as possible from the edge of the glass don't touch dishes on any surface that comes into contact with either the food or the mouth check dishes for chips and cracks remove broken chipped or cracked dishes and throw them away since they cannot be santized and may cause the spread of disease now a few tips on keeping your dish machine clean equipment varies from place to place so first study the instruction manual that comes with your machine but there are some basic rules first turn off the heater then turn the drain handle to open and drain the dishwasher tank at least one once a day remove the strainer pans and overflow cover they should be cleaned of food soil preferably at the pre-rinse stand next remove the rinse arm and then the wash arms both lower and upper the wash arms must be carefully inspected for obstructions such as pruned seeds toothpicks or pieces of bone or glass these obstructions must be removed immediately by taking the wash arms apart otherwise your dishes will not get clean at least once a week clean the rinse arm spray nozzles with a paper clip like this to remove dirt or calcium deposits the overhead rinse nozzle should be cleaned in much the same way after you put the rinse and water arms back on your machine make sure they turn freely that's it spin them now close the doors and with the drain open operate your machine to cleanse its interior finally open the machine and replace the strainer pans and overflow cover leave the doors open until the next time you use the machine this way it will get a chance to dry out and air the entire procedure is simple effective and important and you must follow the procedure carefully hey care must not only be taken to ensure the dishes are actually clean and sanitized care must also be taken to minimize [Music] breakage for each broken dish represents a loss of money to your management excessive breakage could eliminate profit and put you out of a job and that about sums it up you Mr dish machine operator have a vital job you can be a success if you understand your job and do it [Music] well part of those Smiles of satisfaction belong to you [Music] yeah so there's a whole series of this uh it's called The Profession professional food preparation and service program series uh of which we've seen some others so short order cookery is one uh let's see we found one about salad which was really great um but I don't see it on this list that's interesting fast sandwich making I'm interested in that uh selling Wine and Liquor I think would be good um yeah dining room safety we've we've seen uh sanitation not we don't have rodent and insect control but I'll keep an eye out for it uh so anyways uh Marvin Miller yet another mer narrator that we have to kind of keep an eye out for I love what my hair is doing all right uh what do we got going on what's next next um nightclub boom this is a part of the march of Time series uh which was kind of a newsreel series that was shown in theaters but they're instead of being about specific news events they're about something in general and uh this one is we showed a radio broadcasting today uh yesterday and today we'll watch nightclub boom enjoy [Music] the marks of time [Music] in no country in the world does the average citizen have a greater money investment in his home than in the United States of America in the number and variety of devices which make for pleasant and comfortable living the American Home surpasses all others every year resourceful industrialists and gadgeteers bestow upon the housewife more appliances calculated to make her work easy and provide Leisure for her and her family but in spending this Leisure many American families like nothing better than to get away as promptly as possible from home and all its Comfort number one one means of escape from the he side is the automobile number one nighttime Amusement is the motion more than 50 million US citizens regular movie goers pay into the nation's box office nearly $2 billion a year sports are another favorite attraction gregarious and uproarious and agreeably sedentary for spectators they are a welcome Refuge to the millions of Americans who would rather be out with crowds of their fellows than cooped up at home more and more Sports in which amateurs can exhibit their prowers have become a social activity for the whole family and when the last game is over the last movie out the American citizen has a final alternative to home in another currently flourishing institution the nightclub throughout the United States there are about 70,000 night spots and today their major problem is less how to attract customers than how to make room for all those trying to get in perhaps 10,000 of these places are real nightclubs with a band and [Music] entertainers attendance at nightclubs across the land tallied up to some 200 million admissions last year a take of well over $600 million over a 100 million more went to the government in taxes capital of the nation's nightlife is its biggest and richest city New York whose thousand OD nightclubs range all the way from Side Street bistros to elegant establishments whose names and nightly doings are familiar to gossip column addicts from coast to coast today New York's nightclubs are enjoying an extravagant boom night after night such opulent pleasure domes as the Monte Carlo are packed to the doors with well-healed customers whose spending is on a scale unequaled even in the fabulous days of the Roaring 20s as a social institution New York's nightlife has come a long way from the prohibition ERA with its CLI joints and gang Warfare but though it is today a substantial and decorous branch of Show Business it Still Remains a highly speculative industry because only one new club in 10 that opens its doors as apt to last out the first season it is an investment strictly for those who are willing to gamble on a long chance the bulk of the initial investment goes into decorations the goder the better to put the customers in the right frame of mind for spending kitchen equipment accounts for another Big Slice of the investment there has to be a floor show to get the customers in and it has to be costumed and rehearsed all of which takes money today every Club has to conform to rigid fire laws to strict licensing and police regulation including the fingerprinting of all employees a lingering reminder of the reputation the industry acquired in its gangster ridden prohibition days listen we got every license in the world but the Cabaret license and you'll have to give us a temporary one so we can open up now here boys we got the the health license we got the building license and we got the liquor license and we got rid of the catroom so all we have to do is get the Cabaret license and we're all set to keep a first class place going takes a big stop sometimes as many as one employee for every two guests the first one the public meets is the doorman stationed there to let in the right people and brush off any not up to the tone of the establishment well we're just going to sit at the bar oh there's no one at the bar either ah nuts to you come on in most clubs the check room girls are hired at a fixed salary by an outside concessionaire he picks them for the kind of personality that will attract tips and everything they could their employer box which is securely locked for the check room and other concessions including the washrooms a concessionaire May pay $50,000 or more some nightclubs are largely financed in this way washroom attendants have many devices for extracting sizable tips the range of personal services they offer is largest in the powder room which serves not only as a restroom but as a Repair Station a social Center and incidentally as a strategic relay point for gossip the fuss she made coming in just to show off her new M what do you think strictly D muskrat from where I sat I saw the BG off label look dear anyone can sew in a Burg off label social Arbiter of the nightclub is the head waiter who separates the sheep from the goats to celebrities unknown socialites he assigns the best tables good-looking well turned out cust customers get next consideration but folding money is the shest leveler of barriers with run-of-the-mill non- tipping customers the head waiter who is out to make money has ways of dealing beginning with cold disapproval and working up to polite extortion for every nightclub has its Siberia the outer Fringe of tables jammed into odd Corners remote from the floor show where traffic is heaviest noise is the loudest and the Barfly is apt to be most obnoxious at these tables Thrifty customers or those unaware of the time honored ways of New York nightlife quickly learn the importance of taking care of the head waiter see if you can find us a decent table somewhere thank you sir I shall do my best by such pressure a really hardboiled head weer can squeeze out up to $11,000 a week in tips when business is booming [Applause] the ordinary waiter cannot hope to rival these earnings but his tips average 20% and since prices are not low he can count on anywhere from $1 to $150 a week the waiter who knows how to put on a good show can increase his tips and at the same time help the club by distracting attention from the quality of the food for in many nightclubs food is apt to be indifferent at best but there are some New York night spots which take great price in their Cuisine among them is the 21 Club nationally famous since its Speak Easy days when it was known as Jack and Charlie's a restaurant rather than a nightclub 21 is best known as an after dark Resort for Manhattan and Hollywood notables almost as well known today as their more distinguished customers are 21's hosts the ubiquitous Burns and kler brothers any night in the week they are more than likely to be entertaining a dozen or so front page Personalities in their dining room people like Elliot Roosevelt and his wife the former Fay Emerson of the movies and Hollywood spectacular Orson weld 21 has no floor show and no Orchestra to attract its centel as nightclubs do heart of 21 is its kitchen through which nightlife tourists are occasionally conducted with pride by host m prindler a restaurant and Nightclub kitchens are very much the same in Organization no matter what difference in the quality of the food they put out as far as equipment goes our kitchen is one of the best in town but what really makes it is the staff headed up by the metro Cuisine he is responsible for the planning and for the quality of the food prepared by the men under him in our place there are about 20 of them chefs cooks and assistants some for roasts others for salads and [Music] on Chefs work under terrific pressure but we know it's good for our Cooks to be kept on their toes by the gmes of our centel even though as artists they may occasionally react with a little temperament those burn was on the fish bur was all right it's for Mr Curtis he says don't get the sauce too Brown and plenty of hazel nut maybe like to come in here and make it himself huh but in the average nightclub as distinguished from 21 the bar is the thing for the profit on liquor is about 7 70% and accounts for much of the income of the place a skillful bartender protects his boss's profits by mixing his drinks without waste chisling by the use of inferior or cut liquor however May cost a bar its license most nightclub patrons stick to the standard hard drinks but in places such as El marocco which cater to the more Urbane International clientele there is a steady demand for Fine Wines and lurs El Morocco's proprietor John perona takes great pride in his collection of Vintage Wines well in a dinner in supper club like this a large part of our investment is tied up in Wines and Liquor our list still includes imported wines and alcohol of the best years because we had the foresight stuck up to capacity Before the War Began storing wines is a delicate problem some bottles should be rotated slightly at intervals others should not be touched until served all of them are helped by strictly controlled temperature CER for champagne than for steel wine the somier of wine stward with this traditional chain and key and testing cup runs the Celler years of experience have made him a connoisseur and nothing is added to our collection until he has tasted and approved it but more than food or drink the show is what makes or breaks a nightclub in the most famed of all the clubs the St the customers themselves are the entertainment the St is jammed nightly with people to whom a glimpse of jinx faulkenberg and clip Edwards means more than any floor show nightlife at the stor Club gets reported in detail by many nationally syndicated columnists like Leonard Lions long established places with big reputations such as this don't need a floor show people come to see and be seen to Sherman Billings Le the proprietor a houseful of celebrities like Moss Hart natto preminger Paul Douglas Earl Wilson Bert L and Charlie Butterworth is worth more than any performers he could hire at the store Club the Cub room is set aside for celebrities and favorite clients most clubs on my nightly beat depend on their show to bring in the customers and there are as many kinds as there are tastes big popular price places like the 400 draw the young crowd they want bandsmen like Jimmy dorsy and room to dance [Music] show places round Time Square the Zanzibar for instance draw the people to whom an evening on Broadway is a Gaya event for about what they paid for their pair of theater tickets these big places give them supper and a full review with drawing cards like the ink spots to get to heav cuz I know that if I got [Music] toen [Music] you the East Side spots the embassy in places like that are smaller and more expensive they draw a sophisticated audience which goes heavily for dancers like greb and [Music] ler for the Broadway crowd there are Comics like La Martin Danny Thomas who gets his laughs by a fast give and take with the audience and even by kidding the institution of the nightclub multi-millionaires always occupy space on the Dance Floor got nothing but money these people loaded then come the semi millionaires those of you who for a while thought you had a ringside table you're laughing come somebody richer than you you're the second row quick like that table drops from the ceiling then come the middle class and the peasants in the back for slightly higher brows there are Retreats like the two Cafe societies Uptown and downtown they present intimate artists like plaintiff Susan Reed who sing old ballots to the tinkle of a zither Mone and AEL through the street Broad and narrow [Music] crying [Music] and alive alive oh [Applause] to ensure against the shortage of name performers Cafe society's proprietor Barney Josephson digs up promising new talent in out of theway places here and abroad and patiently builds his discoveries into prominence now in this country we like our songs underplayed you give him too much in developing his newest fine a Paris nightclub star Moon the Revel Barney only had to teach her a few added Graces and adapt her Parisian manner to the American [Music] taste Barney had gowns run up especially for her to underscore her guadalupian charm and give her glamour where it would do the most good when Barney has an artist ready he gives the last touches to her show at the dress rehearsal now the empresario has done what he could for his prote from here on out it's up to the performer and the public your walk is just the way I want it you're going to be a wow what is it a wow you'll find out okay fellas simmers spot [Music] Tony for [Music] [Music] [Applause] in Greenwich Village and on 52nd Street jazz bands like Eddie condom dish out for hcats the genuine tailgate and gut bucket [Music] [Applause] w [Applause] on the fringes of New York nightlife there are always a few freaked places which get discovered somehow and do a big business while they last the current and apparently durable fad is a rockus resort on the old bowy called Samy's Barry Foles for years this was a hangout purely for the local aristocracy until the Uptown Carriage Trade found it nowadays the charter members can hardly find Elbow Room in the place so eager and many other [Music] tourists we never go there anymore [Music] it's glor you never go there anymore [Music] the [Music] dance the [Music] many many [Music] [Applause] though the postar night club boom will hardly last forever the US nightclub as an institution appears to be here to stay for on Broadway or on Main stre it provides an outlet for The American's Eternal Restless need for an occasional escape from the blessings of home sweet home Time Marches On [Applause] so it looks like they did an episode of this every month every four weeks um and there's a variety of them uh of which we have some and we've shown some but um man phenomenal to see how uh nightclubs worked back in the day um you know and especially the fact that everybody went to the bowy to slum with some real-time characters uh really really great um so uh oh yeah like so I found out remember was it yesterday I think it was uh I was showing um pigs and then suddenly the YouTube shut down the stream well the claimant on pigs is British path and they don't own that film it's uh was made by Churchill films and I don't know how British path decided that they own it but they've done this before where they had uh where it's like oh I have this Apollo footage that was made by NASA um and I show it in British past day says oh we own that it's like no you don't so at some point I would love I might team up with some other people and uh really take them to task on what they are claiming belongs to them uh I think they just uploaded everything and somebody just said oh we own all this and then they go out and make these Content ID claims um or it's now YouTube is doing it and it is bogus bogus I mean there's certainly stuff that they have made that's awesome and they have every right to it but don't be claiming stuff you don't own I think that's illegal in the United States uh under the dcma anyhow it's great to see everyone um I'm going to take the weekend off take a break and I'll be back Monday and hopefully I will have shook this this malaise this Co malaise um but I appreciate your eyeballs I appreciate you tuning in if you like what you saw hit the
