foreign foreign hello everybody why isn't that sound going away there it is um I'm skip Alzheimer welcome to the AV Geeks lunchtime streaming show where we watch old 16 millimeter films and those were some home movies uh from a collector uh so we don't have any really any other information about them Beyond their home movies um maybe from the 40s I'm not sure uh I didn't actually see a car I didn't look up to see a car uh anyways uh Rick K pointed out in the comments that yesterday was um World Audio Visual day which is a celebration of audio visual materials uh around the world and uh UNESCO came up with that and lots of archives participate in that and um it kind of slipped my mind because at AV Geeks every day is World audio visual day in that we try to show and share stuff that we have uh and we have access to um every week work day work weekday weekday anyways uh so behind me I have a film that we pulled off the shelf and uh we're gonna scan it as we watch it this is milk and milk Foods enjoy milk tastes good and it's good for you so naturally you drink plenty of it because there aren't very many foods in the world that you like and that are as good for you as milk is [Music] but why is milk good for you [Music] to find out you should know what's in it one of the things in milk is water in this much milk there is this much water there's also this much white powder called milk solids and this much butter fat it's butter fat and milk solids that make milk good for you the solids are proteins sugar and calcium that build your body and give you energy butter fat also gives you energy when it's in milk you can't see it because it's in tiny drops the white color comes from the solids good isn't it and now that you know what milk is you may want to see the place it comes from a dairy farm and what happens to the milk before it gets to you you probably know that cows are the animals most often used for milk and the man who raises and cares for milk cows is a Dairy Farmer before he begins milking the Dairy Farmer cleans the cow's utter where the milk comes from the farmer first takes a little milk by hand to check it and then he uses a milking machine from the milking machine the milk flows through pipes the pipes lead to a tank where the milk is cooled cooling slows the growth of germs that might make people sick from the tank milk is pumped into a refrigerator truck the truck keeps it cool on the trip from the farm to the dairy plant at the plant you can see how many things are done to milk before you drink it the truck is opened then a hose is attached this carries the milk to a machine that heats it then quickly cools it again the heat kills germs that may be in the milk this treatment is called pasteurization in honor of Dr Louis Pasteur who discovered it the milk travels through the tubes to tanks where vitamin D is added the vitamin important for growing strong straight bones is in the liquid this machine does something else to make milk a desirable food it homogenizes it what is homogenizing well remember we said that the butter fat and milk is in tiny drops too small to see if milk that is not homogenized stands a while these tiny drops rise and collect at the top to keep this from happening the homogenizing machine breaks them up into smaller drops it forces the milk through a tiny sieve inside the machine a sieve that breaks up butter fat something like the way a garden hose breaks up water into a spray when you tighten down the nozzle and once the fat is broken up it doesn't come together again or rise to the top of the milk so milk before you drink it is improved in three ways it's pasteurized homogenized and vitamin D is added but only about half the milk in our country is for drinking what happens to the other half it gets changed into different foods one way to make a food from milk is by doing the opposite of homogenizing instead of breaking up the butter fat drops so they won't rise you can let the fat rise and pour it off this part of milk rich in butter fat is cream one food from milk cream can be used on desserts or as whipped cream but most cream is made into butter how do we separate cream from milk and then make it into butter you can see in a Dairy plant their milk is poured into a machine that separates the cream from it by spinning after the cream is separated a pipe carries it to another machine a butter churn a lot of cream is poured in then the churn is closed and it begins turning this makes the little drops of butter fat stick together forming lumps after a while the churn stopped and the lumps of butter fat butter can be seen after the liquid is drained away the butter is washed in water then the water is removed and a dairyman opens the churn and takes a sample this is fresh butter butter that will be pressed into bricks wrapped and packed in boxes ready for delivery to your food store but cream may be made into other Foods beside butter for instance ice cream how is ice cream made at the dairy a machine gently churns the cream along with the sugar and flavoring at the same time it cools it making ice cream smooth and Rich with no lumps and no bits of ice all that has to be done now is to deliver it to your favorite store maybe to put into cones and Sundays ice cream and butter are foods made from the cream and fat in milk other foods are made by removing the water from it dairymen remove part of the water to make a food known as evaporated milk evaporated milk is made in tanks where the milk is boiled boiling evaporates some of the water then in a large automatic machine the milk is poured into cans these are the cans of milk you see on the food store shelf remember evaporated milk has only part of its water removed when milk has all its water and its butter fat removed the milk solids that are left are known as dry milk in the store dry milk comes in boxes and at the dairy we see the machine in which it is made the powder is the dry milk with all the water and butter fat removed taken from the machine and packed in boxes dry milk does not easily spoil another food from milk is cheese it's made in an open tank from milk that is stirred while it is heated to a temperature of about 100 degrees dairymen know that milk is turned to cheese by certain kinds of bacteria so the right bacteria are piped in different kinds of bacteria for different kinds of cheese the bacteria in the liquid cause the milk to sour in a certain way with a certain flavor after the milk is sour a chemical called rennet is added rennet causes the sour milk to form curds lumps that are separated from the yellowish liquid on which they float the liquid is called Quay the curds are cut up to let them drain out then they are carried to another room where they are placed in moles the mold gives the cheese its shape after shaping the cheese is packed in boxes and stored to age aging gives cheese its flavor one of the things people choose it for there are hundreds of kinds of cheese packed in different ways in slices bricks or incurreds just as they come from the curdling tanks cottage cheese is the most familiar of these at the dairy cottage cheese is made of sour skim milk that has the butter fat taken out but at the food store you can see that not all sour milk is made into cheese some is sold as it is for instance buttermilk is milk left over after butter has been removed and yogurt is sour milk that has had a particular kind of bacteria added to give it a good flavor yogurt and other foods from milk are an important part of your diet remember what the foods from milk are if you separate butter fat from most of the rest of milk you get cream you get butter by separating butter fat from all the rest of milk you get ice cream by churning and freezing flavored cream if you take most of the water out of milk you get evaporated milk if you take all the water out you get dry milk you get cheese if you sour milk so you see there are many things that can be done to milk to give us a wide choice of nourishing foods foods made from milk foreign you wanted to know about milk Foods um I I kind of dig this this uh the whole manufacturing process thing is really uh interesting to me so um I like it a lot all right so uh this next film I've shown before I've shown my copy which was a beat up uh red copy but in the course of scanning a bunch of stuff cornet I found a beautiful Kodachrome print oh my gosh it was so pretty it's called are you popular and it's it's a hit it's a Lulu so enjoy and figure out are you popular popularity do boys really like her is she welcome to join their group when they are with other girls or when they are in public places hello Molly hi Bill Jerry can I have that math paper you promised even the boys Jenny has parked with want to be seen with her in school or elsewhere now there's a girl that gets my vote well let's ask her over huh go ahead now why do they invite Carolyn to join the group when Ginny wasn't welcome is it because they like the way she looks and dresses because she doesn't date a different boy every night parked on isolated roads I get to know everybody hello well this is um Betty Richards and this is Caroline daddy plays the lead in our class play oh yes I looked in on your rehearsal yesterday well we're all in a in one way or another I'm on the path to a committee and Jerry and I are stay jams yeah two among a dozen or so how about you Wally how do you fit in all this oh I'm a one-man team that does a job with no glory attached I gather all the props and man what a headache I'm like you need a helper could I lend a hand really boy I sure need help I don't know anything about props but I can learn I need some help too have you ever been in the class play yes one or two but I never help with Prime Carolyn doesn't tell them she had the lead in her school play last year that might sound like bragging besides it might make Betty fear competition [Applause] careful too about competing with another girl over a boy that girl likes in math class hey Carolyn about 3 15. that would be fine y'all okay we'll see you then I think maybe I'll Take Care on the dance Saturday night Brian go ahead and ask her maybe we can work out a double date ah later Saturday soon enough hello oh hello Wally I I was wondering if you'd like to go to the Strand Saturday night and see a movie and then go over to teen Town afterward Maybe that sounds like loads of fun I'd like to go what time should I be ready Wally has given some thought to his invitation is considered what Carolyn might like and he has been specific implying his price range so that Carolyn will have some idea of what he can afford Carolyn likes it better this way too it's doing the girl no favor to leave the planning of a date entirely up to her that would put her on the spot on 37 bye well that phone call didn't go on for hours a pretty sensible attitude after all others may want to use the phone or someone might be trying to call in Carolyn keeps a date calendar not a bad idea she'll never have the embarrassment of forgetting a date or of not being ready it isn't sophisticated to keep a date waiting it's inconsiderate do hair and nails that's a good note to write yourself any night but especially when you're getting ready for a Saturday night date as Carolyn and Ellie are doing bear you're talking to a manicure Ally and I didn't even know what to wear with it tonight if I knew whether Bill had dug up transportation to the dam are you sure he knew the phone you here at my house I told him three times I'll have to be getting home to dinner pretty soon take my advice Carolyn think twice before you start going steady don't you ever go out with anyone else no don't you ever want to a knife like this I do I never know what a plan he always says you decide Ellie I think you'd run out of ideas well I'm getting to that point or rather I'm beginning to get the idea that going steady isn't such a good idea hello oh hello Jerry oh the props are coming along all right that's good hey Caroline how about a date well I don't know Jerry when do you have in mind I'm sorry but I have a date tonight tomorrow no I'm sorry oh okay Carolyn well call me early next week Jerry yeah thanks a lot to the same bye can you imagine that he wanted a date tonight and these boys would say what are you doing tonight foreign like you're asking you're so late went over like a lead balloon brother huh maybe so let's see what else we can do about tonight okay what do you say we give Betty a ring oh it isn't too promising Jerry after all it's no compliment to any girl to call her so late she thinks she's a very last resort and sometimes a girl likes a good deal hey has parked the car and come to the door for Carolyn this wins the approval of Caroline's parents and they are prepared to like him a girl is proud of a date her parents like Dad this is catching up on the news before we go to dinner yes I tricked him into taking us out tonight how's the play coming Wally I understand that you're having a little trouble with the props not too much now much as I hate to attend it though Carolyn's hunted up a lot of things we couldn't find any place here I am offset well Carolyn I made some brownies today maybe you and Molly would like some when you return there's some milk in the ice box too isn't there how's that sound fine we'll take you up on that Mrs Ames thanks Carolyn and her mother have found one way a girl can repay a boy for entertaining her a bite to eat at her house will save him money perhaps they will bring another couple home with them that would be fun you're focusing all the time we'll be in we'll be home around 11 mother Wally and Carolyn are spared the embarrassment of arguments and warnings about coming in at night that was settled By Carolyn and her mother before Wally arrived the hour was decided after considering such things as queer Carolyn and Wally are going on the date whether tomorrow is a school day and how many dates she has had recently you have your key here [Music] the family knows Carolyn will stick to her word fun YouTube we will I'll get her back on time bye goodbye bye nice Wally felt at ease with Carolyn's parents and we'll be glad to return to her home where he felt welcome they liked him too he is proud to be with Carolyn because she is attractive and dresses well is friendly with everyone and is considerate of their feelings she likes him for these same reasons and also because he is fun to be with home parents and personality all Health boys and girls to be popular [Music] well I got the color on that was so beautiful I don't think that film was ever run through a projector either this was uh I think they called it an insurance print uh something that they would keep um that they wouldn't run through a projector in case they had to strike a new print from it in case the negative went bad and all that stuff um wow the other thing is of course how they treat Jenny is insanely unfair oh my gosh for a couple reasons one there's a film that came out around the same time called more dates for K which basically tells young women what they can do to get more dates I mean it's in the title more dates per K and uh you know it's just like basically you see K just go from one social situation to another uh looking at potential guys to get go on dates with and so the promise the premise that Jenny has gone on many dates uh is outrageous the fact that she parked in an isolated place uh you know she's kind of but the thing is the guy who parked with her isn't he doesn't bear any he doesn't get in trouble for being he's the one that probably put the pressure on Jenny and Jenny said well if you can let me copy your homework like there's this Transit anyways there you go that's enough of that all right so behind me I'm I have a uh reel of TV trailers of which there'll be some horror movie trailers in there um so let me see if I can get this working enjoy oh wait I have to I have to change the title so TV trailers of course um are shorter than what you would see uh in the theater and they would also be sanitized for um television broadcast all right let me see if I can get this going enjoy what's there there's a tension issue with
