so so so so so so so so hello everybody i'm skip alzheimer and welcome to the av geeks lunchtime streaming show where i am here live back in raleigh north carolina back in the archive after traveling up north in new york and connecticut visiting friends and family celebrating my wife and i's 10th wedding anniversary and also going to a wedding um mostly wearing masks mostly taking rapid covered tests so we can hang out with people um but we're back it was a beautiful trip except for the bumper getting ripped off of our car which did get put back on uh amazingly relatively inexpensively compared to where we were we were in the hamptons and i couldn't live there that place is very expensive and so uh thankfully um the body shop was maybe they pitied us because we were from north carolina backwoods rural people who knows anyways we're back and uh i hope that you guys enjoyed the stuff that i showed um that little experiment i did on friday with uh playing music in the background for a silent film about first aid um i love that that film uh and it's you know it's long and there's no sound for it so it's one of these things where i feel like i can augment it a little bit and because visually it's just so interesting to see the everything's in a like a back uh black background and so everything is kind of you know i'd love to see somebody do some um chroma keen to add it to other things excuse me all right i had a seltzer beforehand that wasn't that was a rookie move anyways um let's get things started with some old stop-motion animation uh puss and boots enjoy [Music] once upon a time a miller dies to his three sons the oldest the second oldest the donkey [Music] and the youngest son was left with nothing but the miller's cat [Music] do thought the sun i will soon die of hunger and i eat my cat oh no cried the cat that'll not be necessary if you will but give me a pair of boots i will show you how clever i can be well a pair of boots was a strange request for a cat to make but since the sun had nothing to lose he called the cobbler [Applause] [Music] the son explained what he wanted a pair of boots for his cat the cobbler set to work at once [Music] the finished boots were magnificent [Music] when the cobbler tried them on the cat they fit beautifully [Music] how pleased the cat was you see a perfect fit [Music] now purred the cat i can hunt for game in the meadows without hurting my little feet on the thorny bushes [Music] the cat departed for the medal [Music] [Applause] [Music] [Applause] the cat carried with him a burlap sack this he cleverly set up in the shape of a trap and baited with fresh nuts no sooner was he hidden then some partridges spotted the nuts when they were all inside the trap he pulled the string capturing them all [Music] that same day the cat took his sack of partridges to the king's palace after explaining that he had brought a gift for the king he was allowed to enter [Music] well said the butler what do you want i want to see the king said the cat the butler told him to wait [Music] a cat wants to see the king a cat to see the king sire a cat wishes to see you let him come said the king sire i have brought you a gift a sack of partridges wonderful said the king who was tired of his usual diet give the cat a bag of gold now there goes an enterprising cat said the king to himself [Music] the cat brought the bag of gold to his master and presented it to him counted said the cat proudly there was much gold a large pile of it you see with my new boots there will be nothing to worry about now i think i will take a little nap [Music] the following day the cat went again to the palace carrying with him what he had caught he went directly to the kitchen ah what a splendid rabbit i will prepare it for the king at once [Music] the king's coachman walked in he was a little thirsty [Music] then the cat overheard some news that sent him running to his master [Music] he arrived with his bag of gold and graciously offered it master may i speak with you in private listen this very afternoon the king and his daughter will be going for a drive exactly at three o'clock they will pass a certain place in the river you will go there and bathe if anyone asks your name it is the marquee of carabas leave the rest to me [Music] precisely at three o'clock the cat spotted the king's coach help help help help stop the coach sire the clothes of my lord the marquis of carabas have been stolen he is now in the water with nothing to wear please will you help coachman cried the king go to the palace at once and get a suit of clothes for the marquis in the meantime the cat hurried down to the river and hid the clothes of his unsuspecting master [Music] in a little while the coachmen returned the cat carried the clothes to his master [Music] put on this suit said the cat the king awakes [Music] the sun did as he was told how resplendent he was in his borrowed finery he looked just as a marquee should look [Music] the two of them walked back toward the coach [Music] sire said the son marquis said the king won't you come for a drive with my daughter and me the cat upon hearing this rushed away [Music] arriving at a field the cat saw a peasant couple my friend if the king should pass by tell him these fields belong to the marquis of carabas the peasants agreed and the cat hurried on by chance the king did happen to pass by me who is the owner of these beautiful fields sire these fields they belong to the marquis of cadabas the king was much impressed my dear marquis you own much beautiful land in a nearby forest woodcutters were at work [Music] the cat rushed up to them and said if the king should pass by tell him this forest belongs to the marquis of carabash and by the way who lives in that castle on the hill that castle that belongs to an evil ogre thank you said the cat and the way he went timber [Music] said the king whose forest is this sire this forest belongs to the marquis of carabas thank you said the king and the way he went [Music] how will i enterthought the cat by the window of course inside seemed deserted but no there was the evil ogre at work good afternoon said the cat my master the maquisa sent me from far away to see if it is true what people say about you that you can change yourself into many shapes from large to small normally i don't perform in daylight but for you i will make an exception you are very obliging [Music] [Music] ah and what do you think of that marvelous marvelous cried the cat it was nothing but tell me can you also turn yourself into a a lion for example of course said the ogre [Music] enough enough said the cat please no more there now are you satisfied oh yes said the cat but tell me can you also turn yourself into smaller things as well something very small like a mouse for example the ogre did that very thing he was a mouse and in an instant he was gobbled up by that [Music] not long afterwards the king appeared the cat hurried to the door [Music] sire welcome to the castle of the marquis [Music] ah said the king what a magnificent place it is a pleasure to be here [Music] [Applause] my dear marquis you have excellent taste the princess thought so too may i take your flowers yes please [Applause] master listen can you not see the king's door is very much in love with you the king will certainly give you her hand in marriage if you will but ask him and that is what the son did [Music] [Music] and he and the princess lived happily ever after and so too oops it looks like the uh title or the end was clipped off of that film uh that happens often with some of the films i have in my collection where um the end gets shredded or the beginning gets shredded because the whoever was running the projector didn't know how to run a projector and maybe tried to rant rewind it back through and lost the loop and most a lot of projectors will just shred the sprockets and so that's what happened regrettably but uh that was epic that was epic for a cat um all right so behind me behind me i have to set all this stuff up all right is a telecini where we can transfer films live and so i've got one set up that i have not seen that's what's so great about this is being back in the archive means that i can show stuff that i haven't seen before that i pulled this off and i was like huh i wonder what this is and uh the title of the film is old ladies camping trip but it's the credits uh at the beginning say film communicators so they traditionally do things about fire safety and for firemen so i don't know what this film is um it might not be old ladies camping trip i didn't run it through to actually see a title but let's go ahead and watch this together and figure out what it is alright enjoy so [Music] there was an old lady who lived in a shoe she had so many children who lived with her turn springtime summer winter and fall the old them all summer is here it makes the old lady kick yeah today we're all out on the championships [Music] [Applause] [Music] [Applause] [Music] fire extinguisher first aid smoke alarm life jackets and dog where's cousin jim climb aboard can't wait for sleepyheads everybody buckle up into the country we will go alone [Music] and left me behind [Music] it's the end of the road the kids start to shout okay everyone out [Music] now cousin jim you just get in line oh cash [Music] [Laughter] they keep to the path the children walk in pairs and don't feed the animals especially it must be the fresh air look cousin jim's found the perfect place to come [Music] cousin jim's tent gives the old lady concern it's made of a fabric that can easily burst now here's a tent that's quite all right it's made up of fabric that can't night but if there's a fire oh what a tragic event have two ways out of every tent [Music] now the campers stop their play we're going to build a campfire the right way build the fire away from tents and overhanging trees and watch out for sparks that can drift in the breeze smoldering sticks this liquid starter will do the trick real quick oh gasps all day long has been sunny and warm but suddenly oh my it's a thunderstorm lightning lightning oh mercy me never take shelter under a tree when you're in the country with no shelter around get into the open crouch low to the ground crouch low to the ground cousin jim says that strikes me as a dumb thing to do [Music] [Applause] [Music] come and get it [Music] oh boys [Music] [Music] [Music] oh wouldn't you know it cousin jim has a candle to toast a marshmallow the old lady tells him you're an irresponsible fellow never i said never have a candle in a tent always use a flashlight a flashlight that's right a flashlight you go sleep in the dog tent this old lady she played too she kept a smoke detector in her shoe with a knick-knack paddy whack give a dog the smoke detectors take her home [Music] when she goes camping she plays three she keeps the food up in the tree with a knick-knack teddy whack popping through the air out of the reach of raccoons and bears [Music] [Music] hmm [Music] there was an old lady who lived in a shoe wherever she goes her children go too when they go camping they know what to do the old lady says [Music] you [Music] explains it it was about fire safety um and uh it was national film board of canada and i've mentioned this before a lot of animators would do work for the national film board and basically what they would do is uh do a proposal for something that had some sense of educational value and then they'd get a grant to make the film and it was all funded by i believe tax dollars you know a national film board investing in the culture capturing the culture of canada uh and um so yeah this was really um a great film had a great song i was just at a wedding where we were in a big tent outside and somebody was roasting marshmallows under the tent and i was thinking i was like i don't know if that's a good idea you know the heat i don't think it'll catch fire but i think it might melt the tent uh a plastic tarp but um maybe they've done it before i don't know but it just it ran wrong in my head okay uh let's do some rehearsing uh for the big show the big event uh this is rehearsal for the moon enjoy [Music] [Music] man now controls more propulsive power than ever before [Music] and his vehicles are more complicated than he has ever known [Music] and he will have to survive in an airless environment where the heat can at one time boil water and seconds later the cold could freeze air solid where weight is meaningless a man of 150 pounds on earth can expect to weigh over half a ton 25 pounds and nothing before he gets back prepare men for space missions nasa has developed complex flight simulators often more intricate than the vehicles they duplicate astronauts john young and don isley are rehearsing for their flight in the apollo command module the astronauts call this simulator the boxcar because of the boxes that house the television and optical projectors that surround the command module [Music] computers respond to the controls and instruments tell the astronauts in training what their spacecraft would be doing this is one of three command module simulators in houston and cape kennedy in which the astronauts learn everything about their command module and are put into sudden emergency situations here they can afford to make mistakes and learn by them the lunar module will be used to land two astronauts on the moon in the lunar module simulator the astronauts learn to fly the spacecraft astronauts jim irwin and john bull are the crew for ground testing the lunar module they're not only rehearsing their roles but also helping develop flight and test procedures [Music] through the spacecraft windows in this simulator they can see views of the lunar surface and of the rendezvous with the command module while these simulators give complete visual presentations the actual feel of rockets firing must be experienced in other ways one of these simulators is the lunar landing research vehicle a trainer that acts the way the lunar module would under the one-sixth gravity of the moon a jet engine its thrust directed down supports five-sixth of the vehicle's weight smaller clusters of rockets are used to control attitude another group of rockets is used by the pilot to land the astronauts will use this free flight trainer to simulate landings on the moon [Music] in another moving simulator the dynamic crew procedures simulator scientist astronauts dr edward gibson and dr owen garriott are getting the sensation of a violent but safe abort from a booster one of the largest and perhaps most spectacular of the moving trainers is the docking simulator [Music] a command module mock-up and an active lunar module both ride on a film of air from frictionless air bearings astronaut bill pogue practices the critical docking maneuver to be performed eventually in orbit around the moon [Music] but while the astronauts use these simulators to train for their complex missions they still must learn to live and work in the hostile space environment this environment is created artificially in the world's largest vacuum chamber located at houston's manned spacecraft center astronauts like mike collins learn to use their pressure suits in the vacuum and harsh temperatures like those of space and the moon but reproducing the sensations of weightlessness is a more difficult apollo simulation problem in this converted air force plane flying special trajectories astronauts experience the lack of gravity for a few brief seconds a good approximation of the weightless state can be achieved for longer periods by training underwater in this tank astronaut dave scott practices emergency transfer from the lunar module to the command module another simulator is used to practice working in varying conditions weightless or in lunar gravity the subject rides in a gimbal system that can be adjusted to give him almost any weight the entire unit of man and machine rides on an overhead air bearing these are the simulators in which the astronauts train for apollo when two united states astronauts land on the moon for the first time they would have landed there many times before and never left earth uh i love those kind of pre uh apollo 11 uh films that kind of talk about the preparation and all the work um and um all the you know how all the engineers trying to figure out like okay so how do we train for something like this how do we train for zero gravity how do we train for um all these things that these astronauts will be encountering um so pretty great stuff alright so i got another film lined up here um this one let me change the title real quick this is let it be um but not what you anticipate uh and i believe this is italian not 100 sure i need to watch it to see um i [Applause] [Music] [Music] my [Music] [Applause] [Music] wow [Applause] nutty italians uh so the name of the film the feature film is uh allegro non tropo and it um tour around i feel like in the 70s and 80s um and so there's um you know pieces that are animated that um tend to be a little bit more adult than uh fantasia because you know they're in the 60s and 70s um all right uh here's a film about flying saucers enjoy [Music] this whole thing started months ago you see i manage a restaurant which is one of many food service operations throughout the country one morning my secretary brought in our year-end operating report i particularly wanted to see how much it was costing to operate our dish room [Music] one item stood out above all others tableware replacement costs i knew dish breakage and wear was a big problem in the food service industry but now i knew what it was costing me how and why did dishes get broken what could be done to cut down breakage how much was breakage costing other food service operators well these were just a few of the questions that were running through my mind and i decided to get the answers i decided to find out if i was the only one that had a breakage problem so i decided to ask other food service operators that i knew how much breakage do you have what are your replacement costs how long does your china last how often do you throw out warn china i guess i asked these questions several times in many places before i got my answer some operators assured me they had no worries in that department at all and i wondered why other food service people just didn't have any idea what breakage and where was costing them many had their breakage cost figured down to a penny and they were doing something about it on profit and loss statements i saw dish breakage in terms of dollars and cents [Music] in other food service operations i saw that breakage was costing them plenty too this is what i did every time i stepped into several other busy dish rooms i simply closed my eyes and just listened i could actually hear the breakage costs i wondered what it was costing the entire food service industry each year as china bangs against china glass against glass millions of dollars dropped smashed cracked chipped and worn away in one operation i looked at their annual china and glass replacement amounted to 165 000 or 35 percent of their net profit a hotel chains figures prove that they break over a hundred percent of their cup inventory every year i found a good example of breakage in a local coffee shop this operator's records showed breakage costs to be about a hundred dollars a month [Music] we quickly calculated how many meals he has to serve just to make up for the cost of breakage one thousand two dollar meals every month [Music] then he hit me with a question that really went to the heart of the whole problem he said okay it's a problem a big problem but what am i going to do about it i told him he might get part of the answer by following a wear washing specialist on his calls that's what i did i made the rounds with a specialist who works for a leading manufacturer of wear washing detergents the company has 750 of these men worldwide and they service over 75 000 food service operations each man is a wear washing cost control expert i decided to learn more about breakage from them so one afternoon i paid a visit to the company's district manager he said that the cost of china replacement had been a matter of concern and study with them for several years now and they had reached some conclusions he said i was certainly welcome to them a survey his company made shows that breakage costs are almost three times the cost of detergents or hot water labor costs are highest and can be reduced and when they are reduced through sound equipment investment and planning breakage costs are cut too in that folder was the combined experience of the company's 750 where washing specialists i had hit the jackpot as far as facts and figures went this study showed what to do about reducing dishwashing costs [Music] breakage control starts with the purchase of the china itself good china is a superior product and it has a hard glazed surface with an under glazed constant research by the ceramic industry has made it both durable and attractive fine china is more costly than most people realize and it represents a major investment the operator ought to consult carefully with this dealer and select china that is durable as well as good looking in prior years the thickness of china indicated its durability the thicker it was the stronger it was with the advent of new ceramic materials it is now possible to construct china that is thinner yet has the strength characteristic of heavier wear the buyer should always stack flatware before he buys flatware that doesn't stack well can lead to costly accidents other design features invite chipping and cracking creamers with pouring lips chip more easily than those with rounded tops teapot spouts and handles are easily broken pots should be washed and stored by themselves fine tableware need not be thin or delicate buyers should consider design and durability carefully before purchasing tableware today's hotel and restaurant guest demands beauty and cleanliness in glassware disposable containers can never take the place of beautiful glass and stemware [Music] generally china inventory should be about three times the seating capacity so the dishes need not be handled too fast shortage of china can in rush hours lead to high breakage standardization in china is extremely important too by standardizing the food service operator can save valuable storage space and handling through elimination and careful substitution one hotel operator was able to reduce his stock of over 30 different types of dishes to only 13 and he reduced his breakage costs as a result [Music] for instance the egg cup was eliminated and the soup bowl was used for both egg and soup service one plate was used both for salad and dessert when different weights of china are used in the same service increased breakage results the lighter pieces take a terrific beating and the breakage costs skyrocket standardization in weight as well as size pays off melamine dinnerware is being used by a great many hospitals school cafeterias and other food service establishments melamine offers certain advantages for some types of operations it is lighter than china 12 melamine plates weigh only as much as five china plates of the same size [Music] however melamine is softer and more easily scratched and stained than china melamine also tends to dry slowly slow drying means streaks and spotting however this last objection to melamine can now be largely eliminated through the use of the rinse injector technique when rinsing is properly controlled through the use of the rinse injector melamine dries fast without spotting and takes its place in the food service industry i was convinced that a lot of breakage could be eliminated by wise buying of china and by careful standardization but the hard cold facts still remain a piece of good durable china designed by the manufacturer to last for years often reaches the end of its life in 60 days or even less the original purchase of china was only the first step in cutting replacement costs there were plenty of steps to follow the next section of the survey showed what basic causes are it's noisy it's annoying but dropping is not the most important factor in breakage but this is a big factor in breakage china bumps against china day after day wear and rough treatment result in cracking grazing chipping and breaking cracked crazed and chipped china should be discarded a simple test with a pencil can show the difference between worn and unborn china careless handling wears and scratches glasses [Music] every scratch on a piece of glass weakens its structure [Music] to prove it take two new glasses scratch one near its rim and then knock them together the weakened glass always breaks a scratched glass worn by friction is ultimately destroyed a slow-motion view of a soiled dish table shows that a single dish handled carelessly can strike a dozen or more other pieces of china china coming in contact with other china produces dull worn surfaces and shortens dish life the abrasive underside of a dish can damage another this hidden wear takes place every time china is handled china that is chipped and cracked should be discarded the food service man discards it or loses customers i asked myself these questions how is my china and glassware handled how often is each piece handled any operation that increases handling also increases breakage scouring takes its toll of breakage and dishware dipping another hand operation is unnecessary one pass washing through the dish machine is the answer important points the study gets across about dish breakage are one how china is handled and two how often it is handled [Music] the next subject of the survey stated that good equipment can pay for itself on the basis of breakage reduction alone in the whole dish handling cycle from storage to customer and back to storage the safest place for a dish or a cup or a glass is right inside a good dish machine even in small operations a machine pays for itself the survey shows that there is five times more breakage in hand washing operations than there is in the same size having a dash machine use of equipment like coated or plastic racks cuts down metal markings on china think about what happens to a drinking glass as it goes from the guest's table to a tray and then must be taken off the tray in the dish room next it's put in a rack by hand for its trip through the dish machine if it survives this far it's taken from the rack and put back on a tray then the tray is loaded on top of other trays on a cart and it's on its way hold it on its way back to the dining room and the guest who'll probably drop it anyway now contrast that hazardous trip to one made with a maximum use of racks and a minimum of hands soil glasses are placed in the rack by the busboy or waitress directly from the table there is no handling at the soil dish table after rinsing they are tilted for a minute or two to let water run off their bottoms still individually protected the glasses are placed on a cart racks interlock to prevent slipping and spilling then the glasses are safely on their way back to the dining area not once have they been touched by hand since they left the guests table again good equipment and employee training eliminates dangerous handling and cuts breakage self-leveling dispensers for instance cut handling to a minimum protect the china when not in use and provide a safe convenient means of transporting clean china to serving centers a variety of carts are available to the food service operator carts protect the china and eliminate handling thus reducing the possibilities of accidents and breakage other facilities that can help reduce breakage include a neoprene mat and duct boards to help prevent accidents on dangerously slippery floors in the dish room to be efficient and economical equipment must be used right the finest equipment made cannot reduce breakage if it is poorly used training is essential good one pass washing through the machine is vital to control costs if the operator adopts a wear washing plan he can achieve ideal one-pass washing first he must select a machine large enough to handle his volume because a pile up on the soil dish table during rush hours leads to hurried and careless handling of china it is here that actual breakage as well as cracking chipping and wear takes a terrific toll china and glasses that are improperly loaded have to be rewashed must be handled again and the chances of breakage are increased how can one pass washing be achieved a well-maintained and properly operated machine hot water and the right type of detergent are necessary but there are other factors an electronic dispenser that maintains an accurate control of the detergent solution is essential when supplies are low it warns the operator perfect detergent control helps ensure one pass washing an advanced design detergent control system in which the compound can be seen can be installed on any machine it's not just the capacity of the machine but the speed at which china can be removed from the machine that determines dishroom capacity slow drying creates a bottleneck at the clean end of the machine another efficiency expert in the dish room is the rinse injector it cuts drying time to seconds and eliminates spotting this device made the towel as obsolete as the buggy whip actual tests have proved that it can increase dishroom capacity by 40 or 50 percent using the rinse injector a drying agent is applied to the tableware in the final rinse this drying agent causes water to sheet and run off rather than cling to the china surface and slow up drying dish room capacity is determined by the rate clean dry dishes can be taken away from the machine the increased capacity of the dish room provided by high performance detergent and the rinse injector can actually be measured in dollars and cents through the use of high performance detergents the electronic detergent dispenser and the rinse injector glasses can be washed together with china giving the machine a doubly useful purpose toweling can be completely eliminated one small restaurant operator told me he saved two hundred and fifty dollars a month on laundry and labor costs with the rinse injector the next section of the survey was on layout it said that layout must always be an important part of the breakage story because poor layout can lead to repeated and careless handling of glassware in china unless the waiters and busboys can be equipped with radar two-way doors offer an invitation to two-way breakage broken china and broken noses a layout that requires cross traffic can shatter dishes as well as nerves [Music] [Applause] [Music] lack of space for stacking and storing usually winds up in a headache for both the manager and the employee [Music] at peak periods when dishes stack up on the soil dish table a mobile table or side track can be used to hold them until the machine is ready for them side tracking permits scrapping and sorting in spite of delays at the dish machine this survey showed that 75 percent of breakage occurs at the soil dish table and if the table is well organized with plenty of elbow room breakage can be greatly reduced wherever possible the waitress or busboy should do the pre-sorting by placing dishes of each size on the dish table as decoys proper sorting is made easier for the waitress or busboy with decoys in place the waitress knows right where each soil dish goes and racking is made easier for the dish machine operator a shelf over the soil dish table puts racks in the convenient position overloading of the racks is prevented by tilting the shelf at an angle special racks for creamers and cups are a must in an efficient dish room in school and industrial cafeterias conveyors had proved an effective weapon against breakage losses conveyors and sub-bayers cut down handling and helped reduce labor costs when time permits put china through the machine one kind at a time this saves hot water and detergent cuts breakage and reduces labor costs because it simplifies sorting confining one type and dish size to a storage area simplifies storage and inventory remember plenty of space for stacking and storing reduces the possibility of chipping and breaking the survey showed there was one element left to consider in breakage [Music] the human element the people in the industry who actually handle the china and glassware the finest equipment in the world plus ideal layout and techniques won't mean a thing as far as breakage reduction is concerned unless the employee is considered it pointed out that in those food establishments where frequent training meetings are held breakage losses are invariably below average how china is handled is determined by education and training the effectiveness of training aids such as slides and motion pictures are one solution of many food service problems including dish breakage [Music] i was beginning to see that just as there is an established procedure in dishwashing operation there should be an established procedure in the training of new employees a continuous training program pays dividends to the food service operator careful training can give a worker pride in his job and proud workers make fewer mistakes i discovered that charts explaining procedures in the dish room are good guide posts to an efficient operation i also found that breakage records posted on a bulletin board and kept up to date remind the employee of his responsibility [Music] a good control program during the day can fall apart at night the night foreman or dishroom supervisor has a responsible job whether it's a small dish room or a large one there's usually a breakage problem the same basic remedies however apply in general to every operation select good china and select it for both durability and design machine washing is far safer than hand washing and good equipment can pay for itself in space labor and breakage reductions good layout and careful planning are major factors in minimizing breakage [Music] training aids helped build the first line of defense against breakage [Music] that was it that was the whole story down to the last detail the story of how the food service industry could cut down millions of dollars of breakage yearly that's a lot of net profit and i was determined to put a slice of it back into my own net profit [Music] love it um these niche films made for a very specific uh audience um about a very specific topic a big fan um i have another film miss mr dish machine operator which i've shown uh which is made specifically to show to people who are dishwashers and uh how to use the equipment and these are for big restaurants and these are big probably hotels who are having big conferences and conventions and you know or seating hundreds of people um who have to you know they have to turn it around very quickly whereas smaller restaurants um have smaller equipment but uh yeah glad to be back in uh raleigh and glad to see everybody's faces jim thank you so much for the
