so so so so so so so so so so so so so i can check that gear in a minute so don't touch anything okay [Music] hey get down from there now [Music] hey turn it over what if it bumped that control by accident you'd be mincemeat by now what have i told you you don't work on equipment when the engine's running well i told them not to touch anything all right i guess i wasn't thinking you weren't thinking you mean you'll work on engines and machinery and not think of your own personal safety here shake hands with danger shake hands with danger meet a man you ought to know i used to laugh at safety now they call me three finger joe [Music] i was young and feisty never did things by the book just let me get my tool box and i'll take myself [Music] i used to laugh at safety now they call me three finger joe although i learned a lesson i forgot it soon enough the knicks and burns and scratches showed the young ones i was tough till another morning i was grinding on some steel my other hand got careless and fed my skin into the wheel shake hands with danger step right up and say hello grinding wheels and metal are what made me three fingers [Music] i've seen mechanics burning and i've seen them take a fall just to save themselves a minute i've seen them lose it all i've watched them caught in trouble seeing them take a chance and lose they get careless for a moment and spend a lifetime with the blues [Music] [Applause] foreign [Music] shake hands [Music] [Music] pokemon [Music] move around inside [Music] shake hands with danger and some friends i used to know compared to them i'm lucky to be just three finger joe [Laughter] i know what you're saying you're like wait a minute skip normally shows that at the end of a show or towards the end of the week well it's really about trying to show it in tandem with a film that i feel like needs it to be shown with and watching that uh raw kodachrome footage of the cotton processing i saw a lot of what i call widowmakers uh where i'm like oh yeah if you're not paying attention you'll get sucked right into that um so there you go it's been a while since i played that so i really wanted to start off on monday with that anyways i'm skipped alzheimer and this is the av geeks lunchtime streaming show where we watch old 16 millimeter films and that that uh cotton processing i can't remember i think i got that on ebay maybe but it's just beautiful really really beautiful footage um what was it shot for i'm not sure was it documenting the process was it to be used in a some sort of short was it for insurance purposes you know i'm not 100 sure and unfortunately we don't have any documentation that tells us so that's kind of the way it is so anyways behind me i've got a telecini which is a film transfer yes [Music] hey [Music] [Music] [Music] foreign [Music] [Music] [Music] hey do [Music] 85 1985's a little late and um for uh educational films not the latest of course i think we realized the cutoff point was like 92 when um the educational films that we have in our collection um kind of stop at 92 and a lot in that a lot of companies basically decided video was the way to go uh videotape um anyways mercer mayor um i didn't grow up with mercer mayor he wrote and illustrated children's books but um my sister had a lot of mercer mayor stuff and um books and so i remember this book i remember her getting this book from the library and uh sounds pretty great um you know there was kind of a hint that uh frogs were frog legs were gonna be on the menu but um maybe the chef didn't get the word maybe he didn't know that there's an exciting taste treat and that is new pork so enjoy [Music] most major newspapers have food sections and most food sections have an editor donna jenkins job is to keep her readers informed about what's happening in the food industry the changes taking place new food ideas including new recipes in the six years donna has been food editor she has written hundreds of articles on food but the constant changes in the food industry the new scientific developments and the growth within each industry provide a never-ending source of feature material [Music] i do receive a lot of material in fact my biggest challenge is to choose which of the many topics that cross my desk to write about this letter and material from the meatboard about the new pork will be perfect for a feature seems time to reinform my readers about pork and the changes that have taken place in pork the last few years besides there are so many great recipes for pork it's a perfect story idea too few people know how nutritious versatile and tasty pork really is this seems a good place to begin the article with a few basic facts about pork [Music] it has 22 percent more protein three times as much thiamin as any other food source and is 98 digestible with 57 less fat per ounce of meat how about this the new pork has 36 fewer calories than ever before that's news why it's almost a completely new meat the consumer certainly benefits from the extensive research in pork in checking at my local supermarket before writing the article i was amazed to find so many different cuts available with so much variety the possibilities for recipes using pork are almost endless and the meat so tender so lean there's pork sirloin roast spare ribs country style and back ribs [Music] and fresh legs of pork boston shoulder roasts boneless boston shoulder rolls pork steaks fresh ham hocks bacon hams in every size shape and cut [Music] smoked pork chops [Music] pork cubes for kebabs and canadian style bacon fresh pork sausage links porklets [Music] loin and rib chops and look at these butterfly chops it's exciting to think of all the different ways there are to serve pork a beautiful pork loin roast [Music] pork chops [Music] or a scrumptious baked ham [Music] well i have the topic for my feature now i need a title of course [Music] the new pork an exciting taste treat donna jenkins is not only a food editor of a major newspaper but a home economist as well often donna uses the pictures of foods and prepared dishes sent to her by food experts but there are times when she wants to develop some of her own ideas and so donna seeks the help of a professional photographer who specializes in making glamorous food pictures for newspapers and magazines for her section on quick meals with pork donna and the photographer working in the newspaper's own test kitchen choose the table settings to appear in the pictures each of the ideas in this part of my article can be prepared in an hour or less broiled pork chops make a delicious and convenient meal when you want a little added glamour garnish with bacon wrapped bananas or pork let's romana easy to prepare just arrange brown porklets on noodles romanov they can serve or how about ham kebabs they're made with ham cubes pineapple chunks and canned sweet potatoes just broil for 15 to 20 minutes three to four inches from the heat there are literally dozens of different recipes that can be used for quick meals with pork and each one is perfect for the homemaker who hasn't the time to prepare an elaborate meal [Music] take for example pork blade steaks browned then topped with slices [Music] part of a food editor's responsibility in doing a feature article is accumulation of different recipe ideas from the simple to the elegant while working on elegant dishes made with pork for the feature donna jenkins newspaper food editor decided to call her boss the feature editor and invite him and his wife for dinner [Music] what better reason for preparing an elegant dinner pork provides dozens of dishes that are perfect for special occasions and holidays and one of the best places to get recipe ideas is from a home economist although donna is a home economist herself she often seeks out the advice and suggestions of others for her elegant meals with pork article she went to the test kitchen at the newspaper and talked with a home economist honor staff who specializes in recipe development [Music] after we talked it over she suggested for a special meal a center cut pork loin roast with a crabapple glaze a three to five pound roast that's really quite easy to prepare it's glazed with the juice of spiced crab apples during the last 15 minutes of cooking and the result is an elegant entree here's another great dish stuffed pork chops use double thick rib chops stuffed with cooked rice mushrooms and grated cheese then bake frequently a sauce or glaze is added to popular cuts for special appeal for instance a boneless ham beautiful especially when it's glazed with jelly which is brushed on for the last 30 minutes of baking and the next day there can be super ham sandwiches from the leftovers [Music] or a beautiful ham and fruit salad pork tenderloin and brochette is a marvelous menu idea thread pieces of tenderloin and cooked carrots squares of green pepper and halved mushrooms then broil and serve on herb rice for an unusual menu she suggested tender smoked pork chops flambe garnished with peach abs what could be more simple and at the same time more elegant for the final touch add warm brandy and light it for drama it's just amazing how many different ways there are to prepare pork [Music] putting together this elegance with pork article has certainly opened my eyes to the possibilities pork offers the homemaker who's entertaining i bet my readers will be surprised at all the different menu ideas they can choose when they choose pork [Music] as food editor on a major metropolitan newspaper donna jenkins is writing a feature on the new pork [Music] one part of the article concentrates on that favorite pastime barbecuing today cooking often moves out of doors so it's timely any season to write about barbecuing or better yet fork a cueing here's a treat from the grill south of the border back ribs a perfect main dish or cut into individual rib pieces for appetizers for a simple spicy sauce just mix taco seasoning with tomato sauce you know the nice thing about barbecuing is when it rains you can do it indoors [Music] boneless loin roast cooked on a rotisserie at a low to moderate temperature to an internal temperature of 170 degrees it's a marvelous outdoor or indoor idea and is a tender juicy dinner for family and friends any cut of today's pork can be cooked on the grill or rotisserie [Music] how about spare ribs brushed with a barbecue sauce while turning on a rotisserie the ribs are basted with the sauce every half hour until they're done [Music] i really should include those kebabs i made for our barbecue last sunday marinate cubes of boneless pork shoulder and italian dressing overnight [Music] then take several small zucchini cut them in one inch diagonal pieces and alternate with the pork cubes and cherry tomatoes on metal skewers [Music] da brush with the marinade place them on the grill and in about 20 to 30 minutes you have perfect pork kebabs italian as fun to eat as they are tender and delicious [Music] and i mustn't forget pork chops [Music] and ham steaks once you begin listing the different pork cuts for a cookout it's hard to stop well i think that wraps up this section of my article on the new pork [Music] outdoor cooking with pork is more exciting than ever so many cuts so many recipe ideas no wonder more and more cooks are discovering for cooking outdoors pork is the perfect choice [Music] it's almost deadline time for food editor donna jenkins feature on the new pork and the last part of the article is being completed donna must decide which of the many different pork recipes to include the wonderful thing about pork is its versatility there are so many different cuts and ways to prepare them like roast leg of pork here's one the meat board sent me chakrut a garnier a gourmet dish that's a combination of fresh and smoked pork including sausage with sauerkraut apples and potatoes [Music] so many different cuts of fresh pork available like porklet pizza sandwiches that would be an appealing lunchtime or late night snack just place brown porklets on english muffins top with tomato sauce and mozzarella cheese and broil a few minutes [Music] so [Music] what a list of dishes to have to choose from smoked pork shoulder stacks made with slices of cooked shoulder roll topped with pineapple sweet potatoes and marshmallows perfect for a quick delicious family meal [Music] or for something different for a special occasion how about savory almond din a chinese specialty that anyone can make pork blade steaks sliced into strips are browned seasoned and cooked with green pepper frozen italian beans celery mushrooms water chestnuts and bouillon top with pimento and toasted almonds and serve with chinese noodles it's an oriental surprise your family will love [Music] and i could add the butterfly chops and rice all orange i made the other night the recipe called for butterfly chops browned and baked on a combination of rice orange juice raisins and pecans so easy to prepare and a perfect meal in one well i think i've covered every aspect of the new pork the higher protein lower fat content of pork a leaner meat with fewer calories ease of preparation elegant dishes with pork its versatility i couldn't have picked a better title the new pork really is an exciting taste treat [Music] um so i have a couple of films that are promotional films made by some uh entity like the potato chip one uh adventures of chip and dip it's like wow look how versatile this food product is and here's some recipes and pretty much uh oriental means soy sauce water chestnuts and some pineapple it's just like that's what it is oh well why don't we just make it oriental by just throwing in these components because that's what asian food is um anyways uh i got another film set up on the telecini and this one is by the same people who did inside out they did something for older kids called self-incorporated and this one is called um down and back enjoy [Music] [Music] [Applause] [Music] sometimes you want something very much it just seems to mean everything to you that's how i felt about being a cheerleader the trouble was lots of people felt the same way everybody practiced for weeks and weeks before the tryout come down to the front and have a seat everybody come down to the first couple of rows in here wherever you can find room [Music] all right quiet quiet okay quiet no talking please everyone be quiet now what we're going to ask you to do is to come up on stage one at a time and go over the routines that you've been working on are there any questions are you girls auditioning are you just spectators okay would you like to come down and sit in the front with the rest of us okay now as you all know only 10 people are going to be able to make the squad now i know you've worked very hard on this and i'd like to wish you all good luck now what i want you to do is when you go up on the stage i want you to call your name out very loudly and clearly and when you're finished your routine i want you to come down the other side of the stage and sit down on the other side of the auditorium which is on your left are there any questions okay then i think we'll start with tracy we'll go in the front row out the second row and so forth okay tracy top t e a l t [Applause] [Applause] [Applause] success said we got to have it that we got to i don't remember much about my tryout it was like my mind froze and my body was moving on its own terry stiffler little louder blues terry stiffler t h a m t e a m team we would like to say hello from the tigers you should know we wish you all the best man but the controllers the pep club and there's a pom-pom squad now these are all ways that you can do just as much for the school and show just as much school spirit as by being cheerleaders and the good part is they're open to all of you without cuts now miss peckham's going to make the announcement as to who made the squad you know i don't think they seem very interested barbara maybe we better just wait till lamar to make the announcement okay now i don't want you to scream if you hear your name because other people want to hear their names too now those of you who make it afterwards i want you to come up to the front so we can have a short meeting about uniforms and you can scream all you want to then okay you ready the boys are eric seegers and david shapley the girls are leslie duvall julie rose meyer kelly forrester betsy alphadoll cheryl nelson laura thalman tracy toft and kim grant and that's the squad now i want you all to know that this is the best year yet and for those of you who didn't make it there's no reason to feel ashamed for those of you who did make it would you like to come up to the front so we can have our meeting [Music] i can't explain it when miss peckham didn't read my name it took me a long time just to stand up something in me kept expecting to hear my name [Music] [Music] i'm really [Music] sorry my best friend annette didn't make the squad either we decided just to forget about it and that let us boil our whole day we went to play tennis with a couple of boys but we really couldn't get our minds off the cheerleading thing the more we talk the matter we get here i'll get it i really think you should have made cheerleading i think we both should have made you mine you were much better than betsy your jumps and your spirit and everything she just got it because she's miss william hey hey you girls say the conference for later we were just trying to give you a rest just trying to know you care it's a home run your turn to taste the balls tom let's get a drink i'll get it books sorry did you watch attendance on tv last sunday the part that gets me mad is that the teachers were the judges they vote for the people they like in class say your forehand's already better than it was last year if i get miss williams in english next year i don't know what i'll do hey look i found another bomb now maybe we won't have to chase him after every game hey let's change partners in the game okay then i'm gonna sit down i know leslie's here on mary and tracy should have made it but betsy really stinks and laura i don't know how she ever made it laura thinks she's so cute i bet she thinks she's going to get all the boys here yeah i think she's stuck up she acted like oh i knew i was going to make it all the time i don't see what's so great about being a cheerleader just because it's all the neatest girls in the school people are waiting are you guys going to play some more yeah sure your time's up at 5. till you and i'll be partners this game i don't think i want to play right now okay you guys play we're gonna talk maybe you can figure a way so they'll cancel cheerleading next year tom's got a sense of humor just like laura later when i got home i really felt terrible like i'd never be good at anything i just wanted to be left alone and disappear [Music] [Applause] i'm not hungry i don't want to eat would you please tell her i would be very grateful if she would do her sulking tomorrow night with her mother's cooking okay it's getting late you better get out and make the salad i don't want i don't want to get up and i don't want to move and i told her the rest of us want to eat she just said leave course you'd be willing to make the salad uh-uh look you're not busy and she could do a day for you next week yeah but she wouldn't do it for me last week when my friends were here so you tell terry that i know she feels bad and i want to talk with her and we can talk while she makes the salad okay dad get out of here dance has to take me out of here he says he wants to talk with you so come make the sound i don't want to talk with nobody you better come down and she threw the pillow at me she didn't miss my eye by that much linda i'm gonna do something now that a parent should never do uh-huh when you have children of your own i don't ever want you to do anything like this like what i'm gonna tell you to make yourself that's not fair i didn't say it was fair i know it's unfair and i don't ever want you to be unfair with your own children now when you finish making a salad i want you to fill up plates for yourself and matt and beth now rick can fill up his own plate i'm gonna go talk with terry [Music] how long have you been there just a few seconds i'm sorry about the sale i can't i'm not worried about the salad but i am a little bit worried about you the cheerleader thinks do you want to sit up and talk about it there's nothing to talk about let's talk about you i wanted to make a squad so much i tried so hard i just couldn't smile i didn't do anything right okay i know i can't say anything to make you feel better right away but i want you to think about something okay now in your life you're going to succeed at some things and you're going to fail at some things but whatever happens you should always always do your best and i am very very proud of you because i know you did your best to try to make sure you the first time i really started to feel better was the next day after school i went to the zoo with a bunch of my friends some of us made cheerleading and others didn't it was a lot of fun just being together and all of a sudden we were able to talk and joke about it one more time [Applause] i don't know well i guess it really doesn't make any difference i mean we won't change anything we're still all good friends yeah me too i mean you guys are my best friends and you're the most important thing give me an hour yeah give me an r friends friendship oh fisher fisher you know i had a cousin who was a cheerleader they weren't any good at their school so i dreamed that i went there and they asked me to be a cheerleader you know i was thinking that if we went to another school then maybe we could be on their children probably i didn't want to go to school this morning i mean i just wanted to hide i couldn't stand the idea of everybody coming up did you make it did you make it i told my mother i was sick what'd she say did she believe you well she's a nurse and when she got the thermometer i couldn't keep a straight face what really gets me is when people come up to you and say oh i know how bad you feel yeah how can they how you feel it didn't happen to them i was really glad when people came up to me i never knew i had so many friends even boys [Music] two weeks later summer vacation started i still felt bad whenever i thought about the cheerleading but i decided i wasn't going to sit home and watch the world go by the more i did things and had fun the easier it was to forget about cheerleading i went on bike trips to special places all over the city i worked hard to learn how to play tennis better the most fun i had was playing on a softball team catcher i don't know if i'll try out for charity next year if i do i'll probably try even harder than this year but i'll do it for myself and if i don't make it i'll know it's not the end self-incorporated was that playing the uh the folk music because she's pissed the dad with that apron it's just it makes me feel you know i can feel it right here that 70s growing up in the 70s type of vibe um so yeah i'm gonna have to find more of those i have more of the self-incorporated things they just have not been totally identified in my database so we will probably show more of those if you like what you saw
