Issues described include marketing pigs at the proper weight, multiple farrowings, amount of fat on cuts, waste from the trimmings, what to look for in good meat type of hogs, and costs versus hog values.

say Ben who's that oh that's Charlie patch oh that's Charlie I hear he's old mr. conservative himself say listen you ain't old enough to laugh at Charlie yet I was a farmer once myself still would be if I'd listened to Charlie I could tell you a lot of stories the one I remember best was back in 1922 Charlie warned me off of those slim jim honks I didn't listen to him then either had to find out myself the hard way what a poor investment they were yes sir Charlie was one of the few men around here that didn't get burned down those hogs okay okay but gee whiz of belt-and-suspenders well when you see the Charlie has given up suspenders then you know a belt is really safe and so we've always felt that it was just our job to produce that if we produced the stuff it was up to somebody else to sell it well we're going to have to change our thinking we're going to have to realize waiter let me have one of those doughnuts will you please we're going to have to realize that we're producing for the consumer and that the housewife is going to have something to say about the price of meat of course I don't mean that we haven't made some progress we have that load of stairs I've just sold they're different from the ones my old man used to ship in that's because there's a different demand today the fatty cuts of pork for instance just aren't selling as well as they used to and that's why I say that hog farmers just can't produce a hog and then forget about it they've got to learn to produce for the customer too well might be but that isn't where your problem is Oh same old story spend a lot of time and money on meat type hugs and then what do you do with it you hold them too long I'll on the fat and those extra pounds are inefficient to poop maybe you did have me tap problems back there when there were a 200 to 220 pounds since that time you put a lot of fat on the outside of that meat now 250 pounds all you can do is sell them there's over fat homes maybe so think more about getting rid of that corn out there than what is it dude in the house you've just got to market them at the proper ways how about the price on this special well leave it the same and a good month we've got one more good limb to go and then this hog market rush will be over guess I'll have to let hazel go too bad she's a good girl and with that husband of hers and those two kids she sure needs the money which this business wasn't so seasonal how do you spell broccoli to seize or two elves to seize 1l so farmers fall huh well seasonal business they don't bring their pigs to market all at the same time I don't mean just for the good of this little restaurant for the good of everybody the farmers especially all I have to do is use multiple fairings but fella was in here not so long ago told me all about what's it mean multiple Farrelly's well Pharaoh eggs are pulling the baby pigs are born and multiple well multiple means space spread out so that some might be born in December some in March June and September can they do that with pigs it's easy with pigs anyway this fellow was telling me he fouled his pigs when it was 20 ball it worked out too much less trouble than he expected he took him to market right at the peak time got top price the year well look who's on the delivery today the big boss himself a specialized service but don't expect this all the time though there's that dog again you
