Schon in den frühesten Morgenstunden fallen die ersten Entscheidungen: Warenladungen werden angenommen oder ausgeschlagen; das Entladen der Waggons beginnt; der Arbeitstag in der Großmarkthalle München nimmt seinen Lauf. Zwei große Gruppen stehen sich auf dem freien Markt gegenüber: die anbietende Partei (Exporteure, Importeure, Großhändler) und die nachfragende (Einzelhändler, ambulante Händler, obstverwertende Industrie). Solange die Großhändler die Waren heranschaffen und in der Halle bereitstellen, warten die Abnehmer auf das Öffnen der Haupttore. Dann beginnt der Warenaustausch zwischen den beiden Gruppen, voran die Großabnehmer, zum Schluss die kleinen Einzelhändler, die das Absinken der Preise abwarten, ehe sie ihre kleinen Fahrzeuge beladen. Die Preise liegen nicht fest, sondern spielen sich frei ein, wie es die Marktlage ermöglicht: Der Großhändler. der in seiner Kalkulation zu einem zu hohen Absatzpreis kam, wird durch das Unterbieten seiner Konkurrenten zum Nachgeben gezwungen; wer ohne Konkurrenz anbietet, bestimmt den Preis. Two large groups face each other on the free market: the supply side (exporters, importers, wholesalers) and the demand side (retailers, itinerant traders, the fruit processing industry). While the wholesalers bring in the goods and make them available in the hall, the buyers wait for the main gates to open. Then the exchange of goods between the two groups begins, with the bulk buyers first and the small retailers last, who wait for the prices to drop before loading their small vehicles. The prices are not fixed, but are set freely as the market situation allows: the wholesaler who calculated too high a selling price is forced to give in by the underbidding of his competitors; the one who offers without competition determines the price.
